Answers:
Ground anything is great in a casserole or baked pasta! I tend to use ground turkey in my recipes, but can't see why ground chicken wouldn't work just as well. Here are a couple of ideas:
Baked pasta: Cook your favorite pasta noodle, drain.
Saute ground chicken with chopped onion, chopped garlic, and seasonings - I often include Worchestershire sauce. When done drain fat off (when necessary) add to favorite sauce mix with noodles. You can add Ricotta or cottage cheese, parmesan cheese, or shredded mozzerella. Stir, add to glass casserole pan (I often spray with olive oil to make non-stick). Sprinkle top with more shredded mozzerella and bake in a 350 degree oven for about 10-15 minutes (until cheese is melted and bubbly). Depending on the sauce that I use, sometimes I will add frozen peas to the sauce mixture. I often use the sun dried tomato sauce from Classico. If you are using a red sauce, try a mostoccioli or penne pasta. With a light or white sauce, try farfalle (bow tie) pasta.

Not up for Italian - go for something even easier:
Saute your ground meat in your favorite spices, chopped garlic, and chopped onion (again, I also like to use Worchestershire sauce - it helps to perk up a bland meat). While sauteeing your meat mixture. Prepare a box of Rice A Roni - the chicken flavored works really well - but they have many flavors that can make an old meal new again (the mexican / spanish rices can add a great ethnic twist - also add a can of diced tomatoes and serve with tortilla chips).
When your meat is fully cooked add frozen peas to defrost/ cook. When Rice A Roni is done, add to meat mixture and stir. Mix in shredded cheddar cheese (I tend to use a three cheese blend). Add mixture to a greased casserole pan and sprinkle with remaining shredded cheese. Bake in a 350 degree oven for about 10-15 minutes (until cheese is melted and bubbly). I sometimes like to add sliced mushrooms to my meat sautee - though they are not my sons favorite.

Both meals taste wonderful for a lunch or dinner meal, both taste fabulous as leftovers, and both can be pre-made, frozen and used later!

Enjoy!

Let's see ... try making taco's.. its easy.

I make Shepherd's pie with it.
Brown the ground chicken, spice it with whatever you wish, fry some ground onion, then maked mashed potatoes, add cream style, and/or whole kernel corn, and layer each sparately. I generally top with american cheese and bake at 325. until cheese is melted about 15 minutes. mmmmmm good!
