No you can simmer it in the pan (add onions, garlic and some white wine). Baking it in the oven is another fantastic way to cook salmon as well.

No, you can poach it in court bouillon, bake it in a foil parcel, grill it, steam it, make it into Thai fishcakes and deepfry it or eat it raw as sushi, sashimi or tartare.

try baking it in a tinfoil pouch with aromatics (lemon, thyme) poaching....but that doesnt lend to much flavor...

You can put it in a slow cooker in the morning with some tomato sauce or honey mustard dresssing & seasonings. Cook it on low for 8 hours and it'll come out beautifully!!!
We always grill our salmon. We take off the skin to help on the oils even though most people would prefer to cook it with the skin on for extra flavor. Cook it in a seafood basket to prevent the fish from falling through the grates.
I always bake mine. Skin side down, and put seasonings and lemon on top. Yummy. A really good recipe it to spread low fat plain yogurt on the samon, then fresh cut dill, then some fresh shredded parmesean cheese, try it, it sooo good. Bake salmon at about 375 for about 20 mins, that should make it perfect.
Why not trying baking it in the oven for about 20 minutes or so. Use a marinade on it for added flavor.

I bake my salmon. I spread a bit of mayo on the top then sprinkle some furikake (japanese seasoning) and bake it for about 30 minutes at 350 degrees. Turns out really juicy and flaky!
poach in wine/water mix. steam over the same mix.serve cold with yogurt based sauce. broil, bake, saute, grill. real versatile piece of fish. standard is ten minutes an inch, but salmon responds better to about eight. it continues to cook after it comes off heat. enjoy.

Here's how I make it, and it's very simple cuz I'm not a great cook, LOL:
Coat the bottom and sides of a small or shallow baking dish with olive oil. A little extra should sit on the bottom. Lay the filets on top, making sure they do not overlap. On top of the salmon, pour lemon juice and a little more olive oil. Put whatever spices you like on top. I usually do black pepper, garlic, sometimes oregano.
Cover the dish with tinfoil. Bake at 350 for approximately 20 minutes. Depending on your oven, it may take more or less time. It should be flaky when you cut into it, not dense like when it was raw.

Ingredients
Seasoned Salt to taste
2 salmon steaks
2 Tbsp. Sweet & Sassy Mustard Sauce
6 Tbsp. butter
3 Tbsp. fresh lemon juice
Directions
Grill salmon; season with Seasoned Salt to taste. Warm remaining ingredients in small sauce pan; whisk while warming. Pour over salmon. Makes 2 servings.
