Salmon Marinade (Asian flavor)
1/2 cup soy sauce
1/2 cup water, wine or saki
3 cloves of garlic, crushed
2 tbsp ginger, grated
3 tbsp oil
20 to 30 minutes to marinate the fish (we use it as a marinade for tuna, salmon or any whitefish. It tastes different on each.)
SALMON MARINADE II
11 oz. olive oil
3 oz. balsamic vinegar
1 1/2 each lemons
1/8 bunch fresh dill
1 each yellow peppers
1/2 oz. sugar
1/4 oz. salt
1/8 oz. cracker black pepper
1/2 bunch scallions
4 salmon steaks (8 oz. each)
Marinade 4 hours before grilling.
Portion 4 to 8 ounce steaks.
Makes 1/2 quart.
SALMON MARINADE III
1/3 c. orange juice
1/3 c. soy sauce
3 tbsp. peanut butter
3 tbsp. catsup
1 tbsp. honey
1/2 tsp. ginger
1 clove garlic, crushed
Mix all ingredients. Place salmon or other fish in glass dish. Pour marinade over. Cover. Refrigerate 1 hour.
Grill uncovered over hot coals for 5 minutes. Turn. Brush with marinade; grill 5 minutes or until done. Fish flakes easily when done.
MARINADE FOR SWORDFISH, SALMON,
HALIBUT, ETC.
3 cloves garlic, crushed
Juice of 1 whole lemon, approx. 1/3 c.
1 tsp. brown sugar
1 tbsp. soy sauce
1 tsp. Worcestershire sauce
1/2 tsp. poupon mustard
1/2 tsp. black pepper
1/4 tsp. tarragon
1/4 tsp. basil
Combine all ingredients and pour into Ziploc bag. Marinade fish in bag for 1 hour or overnight. Broil or grill.
SEAFOOD MARINADE FOR GRILL
Fish, can be salmon, swordfish, shark or kabobs made of shrimp or scallops or mixture with above
Juice 3 lemons
1/4 c. olive oil
2 tbsp. Dijon mustard
1/4 c. fresh snipped dill
1/4 tsp. salt
Fresh ground pepper (to taste)
1 clove garlic, minced (optional)
Mix all ingredients well. Marinade fish 2 hours in refrigerator. Place fish on hot grill 8 to 14 minutes per side depending on thickness. Baste with marinade.
FRENCH GRILLED SALMON
6 salmon steaks, 3/4 inch thick (about 3 lbs. total)
MARINADE:
1/2 c. dry vermouth
1/4 c. vegetable oil
2 tbsp. chopped chives
1 tsp. leaf thyme, crumbled
1 tsp. salt
1/4 tsp. freshly ground black pepper
Combine all marinade ingredients. Place steaks in a large glass dish and pour marinade over all; cover with plastic wrap. Marinate at room temperature for 1 hour.
Grill over medium fire, 4 inches from heat, turning and baking with marinade, for 12 to 15 minutes, or until fish flakes easily with a fork.

The key here is not to overdo it with too many flavors. Salmon doesn't want an overly complicated marinade.
two of my favorites for marinade and then grilling:
bottled Teriyaki marinade...just the marinade not the thicker stuff
or
60% soy sauce
40% lemon juice
soak your fish in either of these for an hour or 2 then grill and you will have a delicious peice of full flavored fish!
experiment with lime juice, soy sauce, ginger, garlic, dijon, dill, salad dressings, olive oil, capers, green onion, honey, etc...
Pecan Honey Teriyaki Salmon
Ingredients
4 salmon fillets
3 Tbsp. Honey Teriyaki Sauce
2 Tbsp. melted butter
1/2 cup breadcrumbs
1/2 cup finely chopped pecans
Directions
Place salmon in a lightly greased 9 x 13 baking pan. Combine Honey Teriyaki Sauce and butter; brush over salmon. Combine breadcrumbs and pecans; sprinkle evenly over top of salmon. Bake, uncovered, at 450° for 15-20 minutes or until salmon flakes easily. Makes 4 servings.
The best depends on your preferences.
The easiest is by melting butter or margarine, adding lemon juice and dill weed. Using enough of everything to coat the amount of salmon that you are cooking - careful with the dill (you don't want your salmon completely green). If you really like to taste the lemon, add more lemon juice than butter - you can even slice a lemon and cook the slice with the salmon which will help keep a lemony flavor and will look "pretty" afterwards. You can add twists to this basic, by adding garlic powder or chopped garlic, or by adding black pepper and salt, or other flavors and spices - even white wine.
Or get a little crazy and go sweet - try a white wine mixed with a orange juice and a little honey or brown sugar - instead of slicing a lemon - slice an orange and cook with the salmon.
Another yummy twist is Terriyaki - you can either purchase a store bought marinade (such as Lawreys) or make your own with soy sauce and pineapple juice (you can even add pineapple bits or for a twist chopped garlic)
You can bake or broil in an oven or make on a BBQ grill - for best cooking and flavor results, I cook my salmon individually wrapped in aluminum foil (it also helps in removing the salmon skin - if still on the fish - the skin tends to stick to the foil and peels off easily while removing the fish from the foil). The foil also helps with even cooking (especially on the grill) because I am able to flip it over and cook both sides.
