Do cooking schools have lessons about chemicals and those sort of science?

Do chefs need to study chemicals in order to be a chef?


Answers:
If you want to be a good chef, then yes. you need to know about the chemical reactions in food. Molecular Gastronomy is pretty big right now. It's not so much food science, but the science of food. Some really crazy things are being served in restaurants, and it's with knowing alot about chemical compositions and reactions that this is happening. You can check out a couple sites:

I am pretty sure the bigger schools do! Like the CIA and maybe some others. You should take one at a community college if your school doesn't though.
