tips for soft,spongy cake? yum........
Answers:
take four eggs break them all in one bowl put some flour and milk nicely mix it to get a pulp like thing then put it in an oven for 16 to 20 mins for 250 celsius(not to sure) then u'll get a nice spongy cake
1. Cream 150g of softened butter with 150g of sugar in a bowl, till mixture turns a bit white.
2. Beat in 4 eggs, one by one.
3. Incorporate 200g sifted self-raising flour and 50g cocoa powder and beat well.
4. Add some milk if mixture looks a bit dry.
5. You may add chocolate chips if you want.
6. Pour the batter in a well-greased pan and bake at 180 degrees celscius for about 45-50mins.
TOPPING CREAM:
Melt about 200ml heavy cream and 150g chopped chocolate in a small saucepan. Bring to a soft boil. Pour over the ooled cake.
This recipe is known by many names... I know it as "Doug's Wacky Cake".
Other names... "Wicky Wacky Cake", "Crazy Cake", "Welfare Cake", "Depression Cake"(because of the 1930's depression...not the mental thing)
It's nice and chocolaty... you may have to make it a few times to adjust to your taste as far as sugar, cocoa and amount of oil for moistness.
It's also allergy and vegan friendly because there isn't any butter, milk or eggs in it.
(Just to let you know, this isn't my personal recipe... I got this from Allrecipes.com and they called it Welfare Cake.
My recipe has the cake mixed in the 8x8" non-greased pan that you bake it in and uses less amounts of ingredients... I will try this version for the amounts.)

2 cups white sugar
1/2 cup unsweetened cocoa powder
2 teaspoons salt
1 tablespoon baking soda
1/2 cup vegetable oil
2 tablespoons distilled white vinegar
1 1/2 teaspoons vanilla extract
2 cups water
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour pan.
In a large bowl, combine flour, sugar, cocoa, salt and baking soda. Make a well in the centre, and pour in the oil, vinegar, water and vanilla.
Mix well, then pour into a 9x13 inch pan. Bake at 350 degrees F (175 degrees C) for 40 minutes, or until a toothpick inserted into the centre comes out clean.
Too Much Chocolate Cake

INGREDIENTS
1 (18.25 ounce) package devil's food cake mix
1 (5.9 ounce) package instant chocolate pudding mix
1 cup sour cream
1 cup vegetable oil
4 eggs
1/2 cup warm water
2 cups semisweet chocolate chips
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, mix together the cake and pudding mixes, sour cream, oil, beaten eggs and water. Stir in the chocolate chips and pour batter into a well greased 12 cup Bundt pan.
Bake for 5 to 55 minutes or until top is springy to the touch and a wooden toothpick inserted comes out clean. Cool cake thoroughly in pan at least an hour and a half, invert and remove from pan. You can top with a dusting of powdered sugar if desired.
