ICING FOR FIGURE PIPING


4 tablespoons meringue powder
? cup lukewarm water
1? cups confectioners’ sugar, sifted
3 cups granulated sugar
? cup water
? teaspoon cream of tartar

eat the meringue powder with the lukewarm water into peaks. Slowly add the confectioner’s sugar and beat at medium speed until blended. Combine the granulated sugar with ? cup water and cream of tartar; and in a saucepan heat to 234°. Pour cooked mixture into meringue mixture and continue beating at medium speed until peaks form. Use a heavy duty mixer to do this or you'll BURN OUT a hand mixture.
