Tacos was my sons favorite thing to make when it was his turn to make supper.
He preferred flour tortillas instead of the taco shells.
Fry up ground beef and flavor with taco seasonings or a packaged taco mix .
Grate cheddar cheese or whatever you like.
Chop up lettuce, green pepper, green olives, green onions, etc...
Put everything on the table, along with bowls of sour cream and salsa.
Heat up the tortillas if you like.
Have everyone make their own.
spaghetti! It seems difficult, but its not. 13 yo can cut onions and garlic and everything else that goes with it. My 15 yo requires pretty much no supervision now. Breakfast for dinner is a good introduction as well. good luck
It's easy to fry anything, be it fish or chopped meat. Place just a tiny bit of oil in a pan for chicken,(it takes a bit longer to cook)butter for fish or steak, fry til golden on one side and turn until golden on the other. Be creative and add the spices you prefer. Good luck in the kitchen sweetheart. It's more fun than you think.

Italian meatloaf
1 lb. ground beef
1 lb. ground pork
bread crumbs 4 C.
Italian seasoning 2 Tb.
parmesan cheese 3 C.
1 can speghetti sauce 16 oz.
eggs 12 each
2 Tb. pepper
1 Tb. Salt
2 Tb. Granulated Garlic
2 Tb. Granulated Onion
Form into a loaf and cook at 300 degrees for about 1 hour.
I have my 13 year old cook this by herself.
Goop:
1 lb ground beef, browned and drained
Add two big cans of Franco American sphagetti and two cans of tomato soup, 1 can of kidney beans in pot. Serve it w/garlic bread..
Another - simple Taco Salad:
Ground beef, browned and drained. Add Catalina dressing, chili powder and cumin, can of chili beans. Simmer for a while til it starts to thicken up a bit. In the meantime, use preshredded lettuce, cheddar cheese, onions if they want. Pile the salad stuff in a bowl and add a scoop of the meat mixture. My 12 yr old loves it.
Cheese stuffed hot dogs;
12 hot dogs
6 slices chedder or jack cheese, cut in 1/2 the long way.
Cut a slit in hot dog, almost to cut in 1/2, but do not cut through the sides.
Stuff each hotdog with cheese slices.
Place in baking dish close enough so sides touch.
Bake in pre-heated 350 oven 20 min, until dogs are hot and cheese is melted.
Serve with Tater Tots (follow package directions), can be baked at same time as hot dogs.
Variation........Wrap cheese stuffed hot dogs in store bought refrigerated cresent rolls and bake according to package directions.
HAMBURGER PIE
1 lb. ground beef (or ground chicken, ground turkey, or a mixture of whatever)
1/2 onion, chopped (you can do this by hand or in the food processor) (optional)
1 package frozen mixed vegetables
1 packet instant onion soup mix
1 Tablespoon oil
1/4 Cup water
2 Cups instant mashed pototoes (Real potatoes taste better!)
2 Cups grated cheese (any kind you like)
Heat oil in large skillet, add ground meat, when almost browned, drain, add onion (optional) if using onion, cook about 2 minutes on med/high heat, add water, onion soup mix and frozen vegetables, cook uncovered on med/high until water is almost gone. (about 5 min). REMEMBER TO STIR EVERY SO OFTEN! (at least twice).
Meanwhile........have your water boiling for your instant mashed potatoes......follow package instructions.
Place meat/veggie mixture in 8x8 baking pan (you do not need to oil the pan), spread mashed potatoes on top. Place in preheated 350 oven for 15 min. Sprinkle on the cheese, turn oven off, but return the pan to oven for 5-10 min to let cheese melt.
Your friends and family will think you worked all day!

my mother's recipe was like a garden surplus!
2 lbs of hamburg
to be mixed in:
* 2 tbs of oil
* two eggs, beaten
* a couple of handfuls of fresh bread crumbs ... or maybe some dry stuffing mix ...
* a green pepper, an onion, 2 large tomatoes ....all chopped up, any size you wish ... and some thinly sliced celery ... a yellow bell pepper, too ..
* salt, pepper, fresh herbs ... try thyme for sure, and some oregano .. (you can use dry herbs) ...and some cloves of fresh garlic, crushed & minced...
* 4 tbs of fresh tomato paste
directions: mix together the beaten egg, the tomato paste, oil, s&p, herbs and spices, the garlic .. ...mix this into the meat very well, then add the crumbs, finally the vegetables...
put into a large oiled loaf pan or two small ones.... or: make two oval loaves, put onto an oiled baking sheet with sides (a jellyroll pan), or line it with parchment ... and bake about 50 minutesi n an oven preheated to 400'F and turned down to 375'F immediately after you put your dish into the oven. After is is baked, open the door of the oven half way and let meatloaf rest about 10 minutes, or so .. ... remove to a counter.covered with a cloth and a rack to protect the counter .. .. and serve soon ...If you wish to go a little exotic, although not very much, add some allspice or a touch of clove ..
great sliced hot for dinner with mashed potatoes and a lot of ketchup!! (plain green salad ... just dressing, maybe a red wine vinaigrette)... or sliced up cold for sandwiches, especially on Italian heroes ... with ketchup & mayo ... sliced onion, lettuce and tomato ... some dill pickles or olives on the side ...and chips
Here's one that is too easy, takes 25 minutes to cook, and is healthy and will impress. Get a seasoned pork tenderloin (teriyaki is KILLER), some red new potatoes and some asparagus. Preheat the oven to 425. Put the tenderloin in a baking dish. When the oven is hot (about 6 minutes), put the roast in. Wash the potatoes and asparagus under cold water and dry in paper towels. Cut the potatoes into quarters (slice once, then slice each slice again), put on baking sheet and drizzle about 2 tablespoons of olive oil over them. Sprinkle with salt and pepper, then toss to coat each potato. Shove them to one side of the pan. Put in with the roast at the same time the roast goes in. Dry the asparagus and snap the ends off. The asparagus will let you know where to snap. If it's easy, that's the right place. If it doesn't snap off, go higher towards the feathered end. Toss them with olive oil, salt and pepper. After the potatoes have cooked 10 minutes, pull them out, put the asparagus on the empty side and put back in the oven. Cook for another 15 minutes. Pull everything out of the oven (turn the oven off), make a little tent of aluminum foil for the roast and one for the veggies. Let stand for 15 minutes so juices in roast redistribute (that makes the meat juicy), slice into thin slices and serve with veggies. And your clean up is easy!

Pasta and chicken. :) That's like, my main food staple when I have to cook for myself.
Cooking the pasta of your choice is pretty much self-explanitory: put the pasta in a pot of boiling water. As for the chicken, I find that if you cut it up into tiny pieces and cook it for a bit in chicken broth, it's much easier, and you don't need to worry about undercooking the chicken, or making the chicken dry.
