How do you cook rhubarb perfectly?


Answers:
The basic way to cook rhubarb is to stew it very much like cooking cranberries. Add about 1/4 cup water and sugar to taste (1/2 to 1 cup) to a pound of cut-up rhubarb. Cover and cook gently about 5 to 10 minutes. Be careful not to let the rhubarb disintegrate.

If you have a microwave that's the best way. Just add a little fresh orange juice and sugar and cook until you get the texture you want, should only be a couple of minutes. Doing it on the hob you can end up with it very soggy, in a microwave it keeps it's shape.

Ingredients
500g/1lb 2oz fresh rhubarb
140g/5oz white sugar
2 vanilla pods

Method
1. Preheat the oven to 200C/400F/Gas 6.
2. Trim the ends of each piece of fruit and cut in half if very long. Place all the fruit in a roasting tin and top with the sugar.
3. Run a knife through the centre of the vanilla pods and place on top of the sugar.
4. Cover the tin with foil and seal well. Place in the oven and cook for 20 minutes.
5. Remove from the oven but leave the foil in place for 10 minutes. Serve hot or cool and eat later.

Don't cook it. get a small square of newspaper and fill it with sugar, dip the Rhubarb into the sugar and eat. We were all brought up on this exotic dish as children just after the last war. My other favourite was freshly scrumped turnip. Bite off the skin and spit out, eat the flesh and enjoy. Both these dishes were better for having a toilet down at the bottom of the garden where you could sit and read old bits of newpaper as you worked things out.......................

Only add a little water (about 2tbs) sweeten to taste and simmer, stir occasionally, yum!
