DAD'S BLUEBERRY PANCAKES
4 eggs
3 1/2 c. milk
4 c. Krusteaz pancake mix
1 c. blueberries
Break eggs into mixer bowl. Beat eggs on medium speed. Add milk. Beat on low. Add pancake mix slowly. Beat until smooth. Mixture should flow from spoon. Slowly add milk or pancake mix as necessary to achieve same. (Necessary to hold blueberries in pancake while cooking.) Fold in blueberries with spoon. Cook on griddle at 350 degrees until bubbles stop on one side, then flip over. Serves 6-8.
Look up a recipe for basic pancake. Add blueberries to the batter and fry them that way.
Or blend the blueberries with the batter. This will make the pancakes completely blue.
Or...just make a plain pancake and use blueberries as a topping.

3 eggs
1 stick butter or margarine, melted and cooled
Approximately 1 cup whole milk
1 cup fresh or thawed and drained frozen blueberries (about 8 per pancake)
Vegetable oil or butter, for cooking
Serving suggestion: maple syrup and additional butter
In a large bowl, combine the flour, baking powder, salt, and sugar. In a medium bowl, lightly beat the eggs then whisk them into the flour mixture. Combine the butter and 1 cup of milk in the medium bowl then gradually whisk this mixture into the batter. The batter should be slightly thicker than heavy cream. It the batter is too thick, add a little more milk.
Heat a seasoned griddle or a large heavy-bottomed skillet over medium heat. If the pan is not well seasoned, add a little oil to prevent the pancakes from sticking. Spoon or pour about 3 tablespoons of batter onto the griddle to form a pancake. Repeat forming only as many pancakes as can fit on the griddle with 1-inch or so of space around each. Drop 7 or 8 blueberries on each pancake. Cook until bubbles form on the pancake surfaces then flip and continue cooking until the second sides are golden, about 3 minutes longer. The pancakes are best served immediately topped with maple syrup and additional butter but they may be kept warm in a low (200 degree F) oven until all the batter has been cooked.
Just make your pancake batter as you usually would. The only difference; add some fresh, clean blueberries. Make them in a skillet or on the griddle. Sounds like a tasty breakfast!!
If you can pancake mix this is the best way. Krusteaz has a great one. Mix it up like the recipe says & then add the blueberries. Very simple. We like them a lot at our house!

If you already have a favorite pancake recipe you can just throw a handful of blueberries into the batter before cooking them. otherwise here's a recipe.

Depends on how many you're feeding - this makes 15 pancakes/hotcakes.
1 & 1/2 Cup Self raising Flour (flour with baking powder added)
1 & 1/2 Cups of milk
2 eggs
1 tablespoon melted butter
1 tablespoon granulated sugar
Put flour into a large bowl. In a separate bowl add milk first, then melted butter and eggs (lightly beaten), and sugar.
Mix with a balloon whisk to the flour then add blueberries and stir in with a dessert spoon.
Heat pan and add some butter. Just do one pancake to start as the first usually turns out wrong. Don't know why - just happens.
My pan can take 4 pancakes/hotcakes on a setting of 150C. Just watch colour and turn when underside is golden. Cook for about another 3-4 minutes.
I like "Krusteze" brand pancake mix. It says right on the side of the box. to just add 1/4 cup of blueberries. Their belgian waffles mix is even better.
