depends on how big it is. I usually spice it up and roast it for a couple of hours, basting it regularly, and when it looks done, nicely brown on top I use my meat thermometer to check for degree of doneness.

It should take two hours,depends if you like it a bit pink,one and a half hours.

Cook the shoulder in foil at 25 minutes per pound weight at 400F. Then open the foil to allow the outside to brown.

Before cooking, rub the outside of the meat with a mixture of sea salt, ground black pepper and rosemary, add a vidalia onion, quartered, and a couple of stalks of celery.

Take the meat out of the oven and place it on a rack for about five minutes before carving.

Serve with hunter sauce or black peppercorn gravy.
