Poker is on about 6 hours, I'm tired of pizza looking for something quick easy, inexpensive to cook.... thanks
Answers:
QUICK PAN NACHOS
1 large can refried beans
1 lb hamburger
1 package taco seasoning
3-4 cups grated cheddar cheese
1 medium can sliced olives
1 large or 2 med chopped tomatoes
1 bunch green onions chopped
sour cream
guacamole
salsa
Brown hamburger and add taco seasoning as package instructs. While hamburger simmers, spread the refried beans into the bottom of the baking dish and place in the oven under the broiler until beans are hot all the way through.
Top beans with hamburger mixture and then spread cheese evenly over the top.
Place back under the broiler until cheese is melted. Top with green onions, tomatoes and olives.
Cut into wedges and spoon onto a plate, top with sour cream, guacamole and salsa then surround with corn chips.
Scoop up with the chips and enjoy!
TORTILLA ROLL UPS
2 8oz. pkgs cream cheese
1 packet taco seasoning
black olives, chopped
green chiles, chopped
shredded cheese
package of large flour tortilla shells
Allow cream cheese to soften. Combine first five ingredients and spread on shells. Roll up like jelly roll and chill.
Slice into 1 inch rolls and serve with salsa.
RO - TEL (CON QUESO) DIP
1 to 2 cans Ro-Tel tomatoes with chilies
2 lb. Velveeta cheese
Melt Velveeta over low heat; mix in tomatoes until warm. Enjoy as a dip for tortilla chips. Also if you are on a budget, 2 cans of Cheddar cheese soup can substitute for Velveeta.
MEXICAN GUACAMOLE
2 medium avocados
1/2 tomato, chopped
1/4 onion, minced
squeeze of lemon juice
garlic powder
salt
optional:
some chopped cilantro
1/2 jalape?o, minced
Scoop the avocado out into a bowl using a spoon. Mash with a fork. Squeeze in lemon juice, add salt and garlic powder to taste, chopped tomato, minced onion, (chopped cilantro, minced jalape?o), and mix.
Tip: To keep the guacamole from turning brown, put the seed from one of the avocados in the bowl of guacamole. It keeps the guacamole bright green.
hot wings,chili,tacos,hot dogs,hambergers,sandwichs,chil... cheese fries,hot pockets,any will work,all are good and filling.
chilli cheese fries?
buy some shreeded cheese and chilli mix and some french fries... pretty easy, but you'll probably have to run to wal-mart first
why not try some ham and cheese and turkey and cheese sandwiches?
why not throw in some chicken wings and chicken fingers, toss up a salad....put some pretzels/chips out...or make cheese/cracker platter, some deli sandwich meat rolled up on platter, some fresh veggies and dip* then a fruit platter*

Places tortilla chips on baking pan.
Cover chips with desired amount of grated cheese.
Place in oven and set to broil. Broil until cheese is melted.
Take out of oven and put on plates.
Then just top with other items that sound good to you(olives,green onions, tomatoes, chilies, sour cream, onions, etc.).

1 (16-ounce) package polska kielbasa
2 sheets puff pastry, thawed and lightly rolled out
1 egg
Honey mustard, barbeque sauce or apricot jam, for serving, optional
Preheat oven to 400 degrees F.
Cut kielbasa into 6 (4-inch) pieces. Cut puff pastry sheets into thirds (6 strips). Roll each piece of kielbasa in puff pastry and place on a baking sheet.
Beat egg in a small dish and brush generously over pastry. Bake until pastry is golden brown and puffed, about 20 minutes. Serve with mustard, barbeque sauce, or jam, if desired.

2 tablespoons vegetable oil
1 teaspoon dried thyme, crumbled
1 teaspoon salt
1/2 teaspoon cayenne
2 cups assorted nuts --walnuts, pecans, hazelnuts, and natural almonds (with skins)
Preheat oven to 350 degrees. In a bowl whisk together oil, thyme, salt, and cayenne. Add nuts and toss to coat well. Spread nuts and toss to coat well. Spread nuts in a shallow baking pan and roast in middle of oven 10 minutes. Nuts may be made 3 days ahead and kept in an airtight container.
Serve nuts warm or at room temperature.

2 bags corn tortilla chips in 2 colors or different flavors, such as blue corn, red corn, yellow corn, lime flavored, chili flavored or black bean chips -- pick 2 favorites
Pico de Gallo Salsa:
4 vine ripe tomatoes, seeded and chopped
1 jalapeno pepper, seeded and finely chopped, for medium to hot heat level
1 small white onion, chopped
1/4 cup, 2 handfuls, cilantro leaves, finely chopped -- substitute parsley if cilantro is not to your liking
Salt
Beef and Beans Topping:
1 tablespoon extra-virgin olive oil
1 pound ground sirloin
2 cloves garlic, chopped
1 small onion, chopped
1 jalapeno pepper, seeded and chopped
1 teaspoon salt
1 1/2 teaspoons dark chili powder
1 1/2 ground cumin, half a palmful
2 teaspoons to 1 tablespoon cayenne pepper sauce, giving you medium to hot heat level
1 can black beans, 15 ounces, drained
Cheese Sauce:
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups milk
3/4 pound pepper jack cheese, shredded, about 2 1/2 cups
Additional toppings to choose from, optional:
Sour cream
Chopped scallions
Chopped black olives
Diced pimento
Sliced avocado, dressed with lemon juice
Hot pepper sauces
Arrange a mixture of 2 varieties of corn chips on a very large platter or use your broiler pan as a platter.
Combine salsa ingredients in a bowl and set aside for flavors to marry.
Heat a medium nonstick skillet over medium high heat. Add oil, garlic, onion and peppers to the pan and saute 2 minutes, then add meat and crumble with wooden spoon. Season meat with salt, chili powder, cumin and cayenne pepper sauce. Cook meat 5 minutes, then stir in beans and reduce heat to low.
In a medium sauce pot, melt butter and add flour to it. Cook flour and butter 1 to 2 minutes over moderate heat, then whisk in milk. When milk comes to a bubble, stir in cheese with a wooden spoon. Remove cheese sauce from the heat.
Pour cheese sauce evenly over the massive spread of chips and top evenly with beef and beans and the pico de gallo. UBER NACHOS! Serve immediately as is or, garnish with your choice of extra toppings from the toppings list.

Thawed frozen drummettes
place in milk bath then floured
Heat oil in pan or use deep fryer and fry for 5 minutes. Drain and set aside.
In a small pot melt 2 sticks of real butter and then add 2 bottles of your favorite hot sauce. (We like Louisiana style due to the vinegar content; adds kick w/o overpowering heat).
Thicken with predissolved cornstarch to your desired consistency.
Pour over cooked drummettes just prior to serving. They will NOT be soggy but nice and crisp and tangy hot.
Recipe above usually for 2 large bags (about 30-40 drumettes in each)
Serve with assorted veggies and ranch or bleu cheese dressing.
Cheese Rolls.
Spread sandwich bread with butter or margarine and sprinkle with grated tasty cheese and fold into 3.
Place under a heated grill, and toast turning when the first side is done. Spread with butter on the top and serve.
Options; add some spring onions, chives or garlic chives, spread bread with butter and vegemite, or make with cold mince.
Options; To toast, use a sandwich press, George Foreman Grill etc.
Sausage Rolls.
Flaky or Short Pastry.
450 g tube of Sausage Meat.
Diced Onion.
Mix sausage meat and onion with about ? cup of water.
Take one sheet of pastry and lay on the filling in the centre third.
Fold one side over and brush the other with water and press on top.
Turn over and cut into rolls 3’’ long or cut into 3 or 4.
Make 3 cuts on top of each roll and place on an ungreased baking sheet.
Brush with milk and bake about 30 minutes at 215C (425F), in a pre-heated oven.
Sausage and Egg Slab (Pie).
Open a 400gm tube of sausage meat and place in a mixing bowl.
Add a diced onion, 1t curry powder, 1t turmeric, 1 clove garlic, 1T Worcestershire sauce, 2T tomato paste. Thoroughly mix together.(a wet hand is best)
Grease a rectangular oven dish and line with flaky pastry. (I use ready rolled)
Add sausage mix and using a soup ladle make wells, to drop 4 eggs in. Pierce the yolks and cover with another sheet of pastry. Pierce the pastry several times with a knife for steam vents. Brush with milk.
Bake in a 180C oven for 35-45 minutes until the pastry is golden.
Turn out and allow to cool a little then cut in 75mm squares.
