Question:

I have ground beef in the fridge - any interesting ideas for supper?

I am tired of the usual - pasta & meat sauce, chili, hamburger helper-type dish. No dairy in the recipe please, and please be as specific with the instructions as possible. Thanks!


Answers:
Depending on how much time you have and what ingredients you have available ground beef is very versatile.

serves 4 prep time--15 minutes cook time--30 minutes

How about mini meat loaves, loaf shaped, covered in mashed potato "frosting?"

mix 1 lb ground beef,
1/4 cup uncooked oatmeal
1 egg
1/4 cup ready made salsa (more or less to suit taste, but not too much to make meatloaf runny)

2-3 large potatoes or instant potatoes

grape or cherry or quartered plum tomatoes
spinach and/or lettuce leaves
fresh parsley if available

mix well first 4 ingredients (the oatmeal takes the place or breadcrumbs, while providing more fiber)

shape into 4 loaf shapes

Bake uncovered 20-30 minutes in baking pan until cooked through (check by cutting midway through loaf), and firm on top.

while meatloaf is cooking:
Make mashed potatoes, (instant or from scratch)
If making from scratch, chop 2 - 3 large potatoes into small dice and bring to boil, boil until tender, drain (reserve water) and mash.
Add potato water if necessary, to thin enough to spread on meatloaf without sliding off meatloaf.

"frost" meatloaves with mashed potatoes


For presentation

place greens on individual plates, place "frosted" meatloaf on leaves and garnish each with tomatoes and parsley

stuffed peppers are great! there are tons of recipes that are eay to do- just type it into yahoo search:)

Taco?
1. Add teaspoon of oil to pan with a bit of onion and green pepper and heat, then add meat
2. Once it is cooked, add salsa and a hint of ketchup
3. Mix and put on taco shell, then put another shell on top with salsa on the very top
4. Cook for about 15-30 minutes, may vary depending on oven, etc

how about sheppards pie ? a layer of ground beef,a layer of mashed potatoes ,a layer of cheese , a layer of peas and you keep layering untill you are to the top of the pan . good luck .

how bout having sloppy joes , that sounds good dont it ?

Do you have any brown gravy in the house ? You can make some meatballs, put them in the gravy after they are cooked and let them simmer, cook off some egg noodles or other preferred pasta and serve the meatballs and gravy over your pasta.

Brown the ground round with onions in a skillet.
You can add chopped celery & garlic, optional.
When no longer pink, transfer to a casserole dish.
You could also mix in any available canned soup:
mushroom, tomato, celery, vegetable, (not chicken), etc.
If you don't want pasta or chili, try potato as a topping.
Make a layer of mashed potato, cooked sweet potato,
cooked squash, or use thinly sliced or grated raw potato.
You can also use baked beans if your family like them.
Bake this in the oven for at least 30 minutes at 350F.
Test with a meat thermometer if you're not sure.
You could sprinkle some paprika over the top.
I would use cheese, but you said no dairy.

Meat loves are the best and can have virtually anything in it.

Set the oven for 350. It will need to cook for an hour.

Take 1/2 lb of the meat and place into a bowl.
Dice one onion-put in bowl
put in 1/2 teaspoon of salt & black pepper
put in 1/2 teaspoon of Tumeric or crushed mint
Add six diced water chestnuts (optional)
Grate in 1/4 of a carrot.
Add one palm full of either bread crumbs, oatmeal, wheat gearm or crushed shredded wheat.
add three tablespoons of mustard.
Mix well with clean hands.
If still dry add more mustard (or for a flavor contrast add in a can of tuna with the liquid)
Put into bread pan for shaping (or hand shape into loaf shape)
put in pan with about 1/4 inch of water around the meat.
If you want add potatoes or carrots to the water to steam them while the meat cooks.
Put in oven for an hour or so.
