What are some good recipes for Tofu Shirataki?

I bought some tofu shirataki noodles at the store today for part of a recipe. I'm excited to make my dish with it (low fat/low cal fettucine alfredo), but I was wondering if anyone else had any really great tasting and easy recipes I could make with it! Thanks!

Raspberry Turkey Salad

2 (8 oz.) packages of House Tofu Shirataki Noodle or Tofu Shirataki Fettuccine Shape
1/4 cup fat-free raspberry vinaigrette dressing
2 Tbsp. chopped fresh basil or 1/2 tsp. dried basil*
1/2 cup chopped green onions
1/2 cup 1 inch slices sweet red pepper
1/2 cup thin slices greenhouse cucumber, halved
1 cup (4 oz.) roasted turkey, cut in 1-inch pieces
1/2 cup tossed slivered almonds
1/2 avocado, cut in chunks
1 cup fresh or frozen raspberries (keep 2 Tbsp. for garnish)
2 cups mixed salad greens
Fresh basil leaves

Prepare noodles according to package directions. Cut in 2-inch length.
In non-stick skillet, toss noodles over medium-high heat until dry.
Place noodles in a large bowl, add dressing and basil.
Add vegetables and turkey, toss lightly. (Can be chilled up to 1 hour if desired).
Before serving, add almonds, avocado, raspberries and salad greens. Toss again, add more dressing if required.

Garnish with basil and reserved raspberries.

1 (8 oz.) package of House Tofu Shirataki Noodles
2 cups clam broth
1/4 cup dry white wine
2 Tbsp. green onions or scallions, chopped
1 can (6 oz.) crab meat, not drained
4 oz. broccoli florettes
1 cup fresh mushrooms, sliced
1 can (4 oz.) Shiitake mushrooms, sliced, not drained
1 cup imitation Krab meat, flake style
3/4 cup cooked, shelled shrimp, medium size
1/4 tsp. cracked black pepper
2 Tbsp. chopped cilantro (optional)

Prepare noodles according to package directions. Cut into 2-3 inch lengths and set aside.
Combine clam broth, white wine, green onions and crab meat in a 3 quart saucepan, bring slowly to a gentle simmer.
Add broccoli and mushrooms, bring back to simmer. Add flaked Krab meat, noodles, shrimp and pepper. Simmer 3 minutes.
Taste for seasoning. Stir in cilantro and serve.

Shrimp & Noodles in Peanut SauceINGREDIENTS:
2 (8 oz.) packages of House Tofu Shirataki Fettuccine Shape
3 Tbsp. peanut oil
1 tsp. chopped garlic
1 tsp. chopped fresh ginger
2 eggs, beaten
8 oz. shelled raw medium shrimp
1 cup shredded carrots
1/2 cup thin slivers green onions
1 cup thin slivers zucchini
1/2 cup prepared peanut sauce
2 Tbsp. chopped roasted peanuts fresh mint or basil leaves for garnish (optional)


MAKES FOUR SERVINGS

PREP TIME: 25 minutes COOK TIME: 20 minutes

DIRECTIONS: Prepare noodles according to package directions below. Cut in 3 to 4-inch lengths.

In non-stick skillet, toss noodles over medium-high heat until dry. Set aside.

Heat 1 Tbsp. oil in large skillet. Add garlic and ginger. Cook for a few seconds, add beaten eggs and make into an omelet. Remove to a plate, then cut into 1/2-inch wide strips. Set aside.

Heat 2 Tbsp. oil in skillet. Add shrimp, stir-fry until pink. Remove to omelet plate.

Stir-fry vegetables in skillet 3 minutes.

Add noodles, stir-fry 2 minutes.

Stir in sauce. Add egg and shrimp, heat through.

Serve garnished with chopped peanuts and fresh herbs.
