My bread would sink a boat, it's so dense and heavy.?

OK, I started with bread machines. I followed the instructions to a T. Heavy dense bread. After observing the automated process it became pretty clear to me that it's not that hard to do what the machine does. So I gave up the bread machines. I'm proud and exasperated to say that my hand made bread keeps turning out the same as the machined bread. Like a moist brick. Tastey though. But I just wanna know how Wonderbread can achieve, well,... such wonders.

.Kelly __ Here are a few suggestions.
#1--Make sure your yeast is fresh and not out of date.
#2 -- dissolve the yeast in warm water(105*F
to 110*F ) use 1/2 cup water for this step
use a 1 or 2 cup bowl to dissolve the yeast in.Add 1 tea spoon sugar and 3 Table spoons flour to the yeast mixture.(you have just set a bread sponge) sit the sponge in a warm place. It will get bubbly and foamy and will rise. Let rise until it falls. You will know when it falls there will be a ring around the bowl above the sponge.
# 3 -- make sure the flour is eather bread flour or all purpose flour.
#4 -- be sure you are not using more salt than the recipe calls for.
# 5-- place the bread dough in a large bowl
that has been oiled well.Turn dough over to coat both sides. Cover loosely with kitchen towl or plastic wrap place in a warm DRAFT
FREE place. Let double in volum.
# 6 -- Punch dough down and start your make up into loaves.

let the yeast rise longer you aren't giveing it enough time.

Maybe you aren't giving it enough time for the yeast to work properly and the bread isn't rising as it should. Once the dough is kneaded, leave it in a warm place to rise before you bake it.

what the hell are u talking abt? Beard or Bread (that people eat for breakfast)?

If you make it by hand, knead it for less time and then allow it to rise about 30 minutes before you bake it. This let's it become more fluffy and airy.

Air, wonder bread and grocery store breads are mostly air thats why they are light and fluffy. If you want you can try using more yeast and letting the dough rise longer to make more you guessed it air.

be sure you let it double in size before you knock it down the first time. Also, let it double in size after you have formed it, before you put it in the oven. Don't pre-heat the oven, but rather put the dough in, after it has risen. The oven warming up will also help it rise more.

I bake bread about once per week and it is light and fluffy.

On your bread machine recipe book there must be a recipe that calls for milk, try that one ,and your bread will be a I wonder why didn't I think of that before! Let us know if you like your next loaf of bread!

You don't say whether you delay your timer to start at a later time or not.
Try using warm water in the mix - it gets the yeast going immediately and your bread will rise quickly.
I also suggest you check and see how old your yeast is, it may be passed the use by date.
