ASIAN FLANK STEAK

Hoisin sauce, star anise and five-spice powder perform equally well as a marinade.


INGREDIENTS

1/2 cup lime juice

1/4 cup soy sauce

2 tbsp. hoisin sauce

1 tbsp. honey or molasses

1/3 cup Asian or cold-pressed domestic peanut oil

2 tbsp. oriental sesame oil

Flank steak

1 to 2 star anise, ground or crushed

1 tsp. five spice powder

1 to 2 tsp. Tulkoff Ginger Puree

1 1/2 tsp. Tulkoff Chopped Natural Garlic

3 to 4 tbsp. chopped fresh cilantro leaves

1/4 cup chopped scallions, white part removed




METHOD

1. Combine the lime, soy, hoisin and honey in a non-reactive mixing bowl.

2. Whisk in the oils, a little at a time.

3. Add the anise, five spice powder, ginger, garlic, cilantro and scallions.

4. Place flank steak in a non-reactive container. Pour marinade over steak and refrigerate for 2 hours.

5. Remove beef from marinade and place on a broiler rack about 3 inches from the heat source and sear for 1 minute each side.

6. Continue broiling the beef, 5 to 6 minutes for rare or 7 to 8 minutes for medium rare.

Yield: 4 to 6 servings

This site seems to be an upscale food-lovers' haven, so to speak. They have a search feature, so that you can (hopefully) find just what you are looking for.

Keep in mind, though, that the chefs you see on television are very experienced, and make things look pretty simple, even when it requires a good bit of work. If you want something classy, just work more on it's presentation. Besides, the company you keep at meal time is by far of greater importance.

Also, be sure that you're willing to spend the money for a similar meal, as seen on tv- because, more than likely, the ingredients that are called for will be a bit more pricey than the average person wants to pay out for a good meal, especially one that they have to prepare themselves.

I have several menu plans that are elegant, in my opinion, and don't break the bank, so to speak. I'm willing to impart my knowledge to you, if you would like. In other words, I'd be willing to set you up with a nice menu option for an elegant dinner. For example, the menu I refer to as a "fancy feast for 4"-

Allow me to try to paint a picture in your mind:

The meal starts with an appetizer of Lobster Rolls, made with delicious cooked lobster, fresh celery and spring onion, in a sauce of fresh lemon mayo and butter, served on lightly toasted baguette bread.

It continues with a delightful entree; breast of chicken served in sweet red pepper and onion sauce. This sauce is made from heavy cream, dried Italian herbs, and roasted red peppers and onions.

The entree is served with a side item of sun dried tomatoes and pasta. The pasta is a fine angel hair, the sun dried tomatoes are marinated, for a finer flavor, and for a nice addition, the pasta is tossed with Italian herbs and fresh grated Parmesan cheese and freshly ground pepper.

For a sweet finish, Vanilla Cream Terrine, with fresh raspberries and blackberries, is served. This dessert is quite the visual piece, and is sure to be an eye-pleaser, as well as a delicious treat.

For drinks, a non-alcoholic champagne, made with chilled ginger-ale and white grape juice is served over crushed ice in stemmed glasses.

This would be a nice meal, and, with some effort, presented with much style and class!
