What is a good recipe for homegrown green beans?
I just picked a million green beans from my garden and have no idea how to cook them. I really like how they taste at the Cracker Barrel and other restaraunts. Please tell me your recipe! And remember they are fresh not canned or frozen.
Answers:
3 pounds fresh green beans, tips and tails removed
1/4 pound bacon, cut in bite size pieces
1 tbsp. olive oil
1 1/2 to 2 cups chicken broth
Salt, pepper to taste
1 onion, cut into strips
1 pound small red new potatoes
Heat the oil in a large dutch oven or large skillet with a lid and place your bacon in pan over medium heat and cook until bacon has rendered its fat and is crisp. Remove bacon from pan to drain. Add in your green beans and toss to coat in the bacon/olive oil. Add in your seasonings and half of the chicken stock. Cook over medium low heat, covered, for 30 minutes until half done. At the end of 30 minutes add in your onion, new potatoes, reserved bacon and additional stock if needed. Cook, covered tightly for another 30 minutes until potatoes are done. Re-season with salt and pepper if needed.

Brown fresh mushrooms which have been sliced in butter, add a 1/2 teaspoon of vermouth and a sprinkle of garlic salt. Lay beans on top of sauteed mushrooms and let reheat.
Toast almonds whole by placing in a shallow skillet over medium heat. Season with a sprinkle of garlic salt. Do not use oil or butter, toast them dry.
To serve, arrange beans on serving dish, top with mushrooms and toasted almonds.

My mom boils them first, and then adds butter, half and half, sauteed onion, bacon strips, and new potatoes....SO good!!
My recipe is similar to the previous answer.
Heat equal parts of butter and olive oil in a pan over medium heat. Cook 3-4 strips of bacon or panchetta (chooped) until slightly crispy. Add sliced garlic, green beans, salt and pepper. Cook until green neas are tender and serve along side a great piece of beef! :)
Mmmm makes me hungry already.
Saute them in minced garlic
Saute a medium onion, some diced ham until onion is cooked through. Add your beans, trimmed of course, then some water. You don't want to cover the beans with water, just about 1/2 cup or so. Season generously with salt and pepper since the beans have no flavoring to them. Bring the water to a boil, then cook for a few minutes uncovered, then cover until you need to add more water, if necessary. You don't want to dry out the pan, or your beans will burn. Continue cooking until beans are cooked to your liking, and tasting for seasoning as you go. I always make these beans on holidays and my family loves them. Enjoy!
i saute bacon until crisp, remove from pan. add to pan thinly sliced onions and saute until soft. add sliced mushrooms, continue sauteing until they are both brown and almost crispy. remove from pan. remove all fat from pan. add 1/4 inch of water and fresh beans to pan. cook on medium heat for a few minutes. drain water from pan. add 1 teaspoon of sesame oil, add the onions and mushrooms. add minced garlic and pepper. crumble the bacon and add that to pan. heat on medium an additional 2 minutes. sometimes i add crystallized ginger with the onions. the smell of it cooking will make you drool.
The simple southern way to cook green beans -
In a large pot add:
Green Beans
Bacon Grease (I don't have an amount...my grandma never measured anything...just add a couple table spoons full depending on the size of pot and amount of beans...yes, it might seem like a lot of grease, but that's where the flavor comes from)
Brown Sugar (couple tablespoons)
Salt and Pepper (to taste)
And...boil the heck out of it. The green beans will end up so tender and flavorful they'll melt in your mouth.
Yes, this recipe turns something as healthy as a green bean into a heart attack on a plate, but it's worth it. Thank you, Grandma!
boil them for like 5 min in salty water. Take them out & cook them on a pan with a bit of veggie oil, minced garlic, and pepper. Yummy
