Corn soup for kid.?

i want to prepare corn soup for my two year old son.can anybody tell me the exact recepie for the same with no chicken.

Here is a non-version of the chicken stock. Instead this recipe uses vegetable stock.

Thai Sweet Corn Soup (Makes 3 servings)

3 cups vegetable stock
2 fresh lime leaves
1 stalk lemongrass
1 inch ginger
1 spring onion
1 tablespoon oil
1/2 cup carrots
5-6 mushrooms
1/2 cup cream-style sweet corn
2-3 teaspoons green onions
1 teaspoon green chili paste
salt
1 teaspoon lemon juice
1 tablespoon coriander leaves

Take the vegetable stock in a pan.
Add lime leaves, lemon grass and ginger.
Bring to a boil and let it boil for 5-7 minutes.
Chop spring onion into thin slices.
Chop spring onion greens finely.
Slice mushrooms and carrots thinly.
Heat a little oil in a pan.
Add sliced onions and saute for 30 seconds.
Add carrots, mushrooms and saute for 2-3 minutes on high heat.
Strain the stock and pour it over the sauteed vegetables.
Add sweet corn and boil for 2-3 minutes.
Add salt to taste and green chilli paste.
Add spring onion greens and corriander leaves.
Add a little lemon juice for sourness and serve hot.

But I think this is better than the first one bcoz it is a two-year old that you're feeding.

Sopa De Elote or Sweet Corn Soup (Makes 8 servings)

1/4 cup butter
1/4 medium white onion, chopped
1 medium poblano peppers, toasted,peeled and chopped or 1 (4 ounce) can chopped green chilies
8 cups corn kernels, pureed in blender or food processor
1 quart half-and-half
1 quart milk
1 sprig cilantro, minced
salt
1 cup monterey jack cheese, grated

Melt butter in a 6-quart saucepan.
Add onion, pepper and corn.
Saute 3 minutes over high heat, stirring constantly.
Add half-and-half, milk and cilantro.
Salt to taste.
Heat to boiling.
Immediately reduce the heat and simmer for 10 minutes.
Ladle into bowls and sprinkle with cheese.

And lastly, I found a much simpler recipe:

SWEET CORN SOUP
INGREDIENTS

1/2 Kg Sweet corn (canned)
1 tbsp. Corn flour mixed in water
2 tspSoya sauce
5-6 French beans
White vinegar with green chilly, for serving
2 Carrot
Ajinomoto
1 tsp
1 Capsicum (big)


5 cupsWater
1 Cauliflower

METHOD

Finely chop the vegetables and boil till half done. Add sweet corn, water, soya sauce, ajinomoto, salt (to taste), corn flour paste. Boil it for 8-10 minutes till it becomes slightly thick. Serve hot with vinegar.

Serves: 5-6 adults

I hope all the recipes help without any chicken at all.

Here's my recipe

2 corn cobs
750 mls water
1/2 onion peeled and chopped
1 tsp butter
1 tsp cream

Slice the kernals from the corn cobs and set to one side. Take the cobs and boil them in the water for 30 mins. Strain and reserve the broth ( the cobs can be discarded )

Fry the onion in the butter until soft, add the kernals and broth and cook for 20 mins. Blend the soup then strain through a sieve. Add the cream and heat for 2 mins.

I have left out seasoning as the recipe is for your little one. If you want to eat the soup too, you'll need to add salt and pepper.
