Good recipe for hummus?
I have a recipe, but it is not the greatest, it seems to be misisng something. Anyone got a good one to share?

Heaps of CUMIN is the trick.
Crush the garlic by hand using the side of a chef's knife, alternately chopping then mashing. Then work the salt into the garlic.
Blend the Chickpeas and garlic/salt with a little bit of olive oil to start. Add a decent dollop of tahini (somewhere between 1/5 to 2/5 unless you're a real sesame freak)
Then keep adding lemon juice till you get the right consistency.
Add MORE cumin, paprika, salt to taste.
Then add more cumin!
I like to spread a very basic pesto over the finished hummus.
Just blend some herbs, coriander (cilantro) seems to work best, with a bit more olive oil and nuts and maybe another garlic clove.
It seals it beautifully and will keep like that in the fridge for well over a week.
Let me know if you find one. I've tried a few on the Internet and tried some of the mix in the ethnic food aisle. It just doesn't taste the same as going to a good Greek restaurant.
All hummus contain 6 basic ingredients that are blended together
Chick peas
Fresh Garlic
Tahini paste
fresh Lemon juice
salt and pepper
Find the ratio that you like best then get creative
black bean
sun dried tomato
roasted garlic
the list goes on and on
This is a steller recipe. If you try it let me know how it turns out.
200 g chickpeas, canned
1/3 cup tahini
3 whole lemons, juice of
100 ml olive oil
2 garlic cloves
salt & fresh ground pepper
GARINISHES
olive oil
ground cumin
Combine all ingredients (except those for garinsh) in a blender or food processor.
Blend into a smooth, creamy paste.
Taste and add more lemon juice or salt to suit your taste.
It should be the creamy consistency of mashed potatoes.
Thin with additional lemon juice, chick pea liquid or water if necessary.
Scrape into an attractive looking bowl.
Drizzle oil over the surface in a decorative pattern and sprinkle with ground cumin.
Serve with wedges of pita bread and raw vegetables.
I usually don't use a recipe but always include chickpeas,tahini,lemon juice(fresh)salt, pepper,olive oil. I like mine a little herby so I usually throw in what I have fresh(chives parsley, basil etc) and roasted red pepper(one usually) is awesome thrown into the mix as well. It's kinda like chili....anything goes!!!
Edward has the right idea, start with the basics and then add or cut back to please your taste.

cooked garbanzos(chick peas)
olive oil (extra virgin)
roasted garlic
black olives
lemon juice
salt
run the chick peas in the processor adding the oil as you go,(or mash them if you will) till you like the consistancy.
then i add my other stuff to taste.
i dont run the black olives with the chick peas,i chop them fine cause I like the texture with the smoothness of the chickpeas.
