Do your marinade for at least 1/2 hour

Regardless of the cooking surface, for a steak 1 to 2 inches thick. Start with room tempature steak.

Get your grill or pan ripping hot so when a droplet of water hits it, it sizzles instantly. 3 minutes a side FLIP WITH TONGS NOT A FORK place on a plate and let rest for two to five minutes.

Use some meat tenderizer, it's in the spice isle.

You're cooking the meat too long. Choose a nice ribeye that is about 1 1/2-2 inches thick. Cooking should be done on a grill, not pan-fried, or possibly in a broiler if you don't have a grill. On the grill make sure coals are nice and hot to sear the meat and keep juices in, throw the meat on and grill for 5-6 minutes on one side then flip and grill for another 5-6 minutes. This will give you a very rare steak, if you like it rare, flip again and grill for about another 5 minutes on each side. Anything longer will turn out medium to well done depending on time. Of course, it all depends on how you like your steak and the heat which you're cooking at. So the times are approximate. Remember, you can always throw it back on the grill if it's not done enough. Steaks could be expensive to experiment with, so try this the next time you are in the mood for a juicy steak. Forget the rubs forget the marinades, start with the basics cooking times. Just remember one thing you can always cook steaks longer if you pull them off the grill and check by cutting into the center to see if they are to your liking. if you like no pink in the center of the meat, thats pretty much a well done, most of the time dry steak. A warm center with a little bit of pink indicates a medium to med. well.
Myself, I prefer a medium cooked steak, and on the grill a 10oz steak would be right around 4 minutes on each side.

When you get your cooking methods down, then you can get fancy with rubs and marinades. Its always better to start with the basics! good luck.
