Mashed potato toppings...?
What are some things I can put on mashed potatoes besides gravy? Some good tater toppers?
Also, how can I make a simple gravy without any meat drippings?

Try different flavors of sour cream dips -- ranch is excellent, as is onion dip. Salad dressings make good toppings for potatoes, too: I really like a spoonful of bleu cheese dressing on mashed or baked potatoes.
To make a simple gravy without meat drippings, you need a couple of bouillon cubes dissolved in a cup of water or a cup of canned broth. Melt a tablespoon of margarine in a pan and add a tablespoon of flour. Cook for a few minutes, stirring constantly. Slowly add the liquid, stirring well each time to incorporate.
When the gravy is as thick as you like, season with salt and pepper.
Cheese is so good on potatoes.

cheese, butter, garlic, and hey whatever you want to put on potatoes.....you can go out to buy canned gravy without the meat!
You can top mashed potatoes with chives, or with toasted breadcrumbs for crunch.
You can make your own gravy if you have canned stock/broth. Just heat the broth on the stove, and let it get to a boil. In a separate container, mix cold water with cornstarch (try a half cup of water with 3 tbsp of cornstarch), then gradually add this mixture to the broth, stirring constantly.
use a can of cream of mushroom soup and a small bit of water.
i like to put shredded cheddar cheese and bacon bits on top of the potatoes. sour cream is good too on top.
Pretty much anything you would top a baked potato with. I like to mix in sourcream and chives or you can do a spinach and cheese or creamcheese mix.

The french fried onions, like the ones that you put on green bean casserole. You can layer the potatoes, bacon bits, cheese and then the onions and put in the oven until they are browned and it is wonderful.

I like to do a lot of things:
1) Mix veggies such as corn, peas, or green beans into the mashed potatoes (a healthy topping).
2) Crunchy bacon.
3) Cheese (add quickly so it melts onto it a bit.
4) Or do all of th above!
garlic and dried parsley flakes. I sometimes add cumin, you won't believe how different and tasty this is, and healthy too!

now for your gravy
3 cups fat free chicken broth or vegetable broth
1 (10 ounce) can mushroom stems and pieces, include liquid
1/4 teaspoon black pepper
1 teaspoon granulated garlic powder
1 teaspoon chicken soup base
1 teaspoon soy sauce
1 teaspoon worcestershire sauce
4 tablespoons instant potato flakes (Idaho)
In a large frying pan, add broth, mushrooms and liquid and bring to boil.
Add pepper, garlic powder, chicken soup base, soy sauce and Worcestershire sauce, stir to blend.
While still at boil, add potato flakes stirring constantly until gravy thickens to a desired consistency.
Use additional instant potato flakes if gravy is too thin.
If gravy gets too thick, add small amounts of water.
Adjust seasonings to taste.
If you desire a brown color, add a few drops of (Bovril, beef concentrate).
This gravy is excellent with roasts or chicken.
you could also make a beef gravy using beef broth or consumme in place of the chicken and use 1 teaspoon of beef base for the chicken base.

you could do like KFC and have popcorn chicken, corn and gravy on it...served with a biscuit...
Meatless Minute Gravy
Directions:
Add one bouillon cube to two cups of boiling water.
Over low heat, blend 4 tablespoons of butter or margarine with 4 level tablespoons flour.
Combine the above and simmer gently for five minutes.
Add 1 teaspoon Gravy Master and salt and pepper to taste.
Makes 2 cups delicious gravy.
Gravy Master is not a brand I recognize but, I imagine is the same as Kitchen Bouquet or other gravy enhancer, look in the grocery aisle...it is totally worth it to buy a bottle of this, it helps so many dishes!

For french fries i yuse barbecue sauce, sweet and sour sauce, vinegar, or there is a french fry seasoning that the grocery store sells.
Basically anything that you can put on french fries or baked potatoes will work.
my family uses roux mix by Tony Chachere's it is in a yellow can and it tastes really good when you add your different seasonings and when you add it to meat.
I love onions sauteed in butter as a mashed potato topping.
We also have mashed potatoes topped with cheese and bacon as a family supper.
I make "chicken gravy" without drippings-
1c chicken broth or bouillon
1 c milk
2 tbsp butter
2 tbsp flour
salt & pepper
1/4-1/2 tsp poultry seasoning
Melt the butter in the microwave or on stove top.
Stir in the flour, cook for 1 minute.
Add the liquids, poultry seasoning and salt&pepper, stir until completely mixed in.
Simmer gently, or microwave in 2-minute intervals, stirring frequently, until as thick as you want it.
First off gravy with out meat drippings is really gross. So dont even try to go there if you are trying to veggie it then you will fail in that aspect completely.
Now other toppers Just about any thing fried. you can use the potatoes as a bowl and serve almost anything in them and it will turn out good.
try small carrot chunks with spinach or if you dont reallly love veggies then just go with gravy or grated white and yellow cheese that is slightly melted also here is a great recipe:
west side taters
1) mash potatoes or used leftovers
2) grate white and yellow cheese
3) make mashed potato balls
4) make a small hole and stuff it with cheese and then cover it
5) fry them in a pan with some oil
5)flatten them to melt the cheese and then flip
6) cool and serve with ketchup
7) last but not least enjoy
PS these are great with veggies too and for a fancy dinner you can serve these
