TILAPIA WITH CHEESE SAUCE
8 Tilapia Filets
1/2 cup real mayonnaise
1/2 cup Velveeta Cheese, coarsely shredded
1 teaspoon crumbled blue cheese
1 cup potato chips, crushed
olive oil or vegetable spray
sea salt and black pepper
garlic powder, for sprinkling
paprika (optional)
Prehear oven to 400F.
Spray a small baking sheet with olive oil or vegetable non-stick spray (or line pan with parchment paper or aluminum foil before coating with a fine mist of oil for easy clean-up).
Place fish filets on pan. Sprinkle lightly with sea salt, ground black pepper, and a light dusting of garlic powder.
In a small bowl, combine mayonnaise with Velveeta and blue cheese. Spread mixture over fish. Sprinkle with potato chips and paprika.
Bake for 8-15 minutes, or until fish is no longer translucent and is flaky white.
RANCH TILAPIA
1 5 oz. tilapia fillet
1/2 cup Ranch dressing
1 cup Parmesan cheese
2 cups corn flakes
1 pinch salt
1 pinch black pepper
Preheat oven at 350 degrees.
Grind up corn flakes into crumbs. Mix Parmesan cheese, salt, pepper in with the corn flake crumbs. Baste the tilapia fillet (both sides) with Ranch dressing. Coat fish with the crumb mix evenly.
Bake for 17 mins.
BUTTERY-CRUSTED BAKED TILAPIA
4 6-oz boneless tilapia filets
6-8 Ritz crackers, crushed
1/2 teaspoon seasoned salt
1/4 teaspoon chili powder
1/4 teaspoon adobo seasoning
2 tablespoons unsalted butter, cold
Arrange fish on a lined baking sheet. In a mixing bowl, combine crushed Ritz crackers with seasoned salt, chili powder, and adobo seasoning (use clean hands to mix).
Cut butter into 6 equal pats. Place one pat a piece directly on the center of the tilapia. Cut remaining 2 pats into pea-sized pieces and mix by hand into cracker mixture. Sprinkle crumbs equally over each tilapia filet.
Bake in a preheated oven at 425°F for 15-20 minutes, or desired doneness. Serve hot on a nice platter.
Baked Tilapia with White Wine & Herbs
2 fresh Tilapia fillets, approximately 8-10oz each
150ml (1/4pint) medium white wine
1-2 cloves garlic, finely chopped
4 tablespoons freshly chopped mixed herbs
6 salad onions, diagonally sliced
salt and freshly ground black pepper
1/2oz butter
1 teaspoon cornflour, blended with a little cold water
2 tablespoons creme fraiche
Arrange the Tilapia side by side in a lightly oiled roasting tin or ovenproof dish.
Pour over the wine, then sprinkle over the chopped garlic, most of the herbs, the salad onions and seasoning to taste. Place half the butter on each fish.
Cover with a sheet of lightly oiled foil, seal in the fish then bake in a preheated oven 350F, for 30-35 minutes.
Transfer the Tilapia to a serving dish and keep warm. Pour the juices into a pan, stir in the blended cornflour and simmer for 2 minutes. Stir in the creme fraiche, pour over and serve immediately, sprinkled with the remaining herbs.
Cooking Time: Approximately 35 minutes Serves: 2
Saute it in a pan with olive oil. Simply cook it on each side for about 4 minutes (or more depending on the thickness). When you flip the fish for the last time, throw in chopped onion or shallot, minced garlic, some olives, a tablespoon or two of lemon juice, 1/2 a cup of crushed or chopped tomatoes (fresh or canned - this will make your sauce), and salt and pepper to taste. Serve the tilapia and sauce over linguine or your favorite style of pasta.
Top with a bit of fresh parmesan or regiano cheese.
Tilapia Curry (I am assuming that you have about 4 fillets)
1. Take the tilapia fillet/ pieches
2. Marinade for 30 mints with salt, lemon juice, a little garlic paste (this reduces the fishy smell)
3. Fry in medium heat for 5 minutes each side
4. on a different skillet heat up vegetable oil, add 1 onion and fry till golden brown.
5. Add salt, 2 cloves of garlic, 1 table spoon yogurt and 1 cup coconut milk, 1/2 teaspoon red chilli powder.
6. Cook the spices for about 5 minutes and add the fish. Turn down the heat to a low and cover and cook for 5 minutes.
Enjoy.
This is a little thai tasting, but absolutely delicious. If you really don't like the fish smell what so ever, try frying it for about 7-8 minutes each side on low-medium heat.

Parmesan Tilapia
1 1/2 cups mayonnaise (not Miracle Whip)
3/4 cup parmesan cheese
1 1/2 tablespoons garlic powder
1 1/2 tablespoons black pepper
2 tablespoons mccormick it's a dilly salt-free lemon & herb seasoning (Lemon-Dill blend)
4-6 tilapia fillets (this recipe will coat 4-8 pieces fish, depending on the size of the pieces)
Mix all ingredients together. If it appears too thick (like really thick paste), add a little extra mayo. If it appears too creamy, add another few shakes of cheese. Like Rachel Ray says, "Eyeball it". The consistency will be thick, but still stirable and slightly creamy.
Next, take the fish, one filet at a time, and coat only one side with mixture, making sure you coat the whole side with at least a 1/4 inch worth of mixture.
Place fish (coating side up) in a slightly greased oven dish and bake on lower rack at 350F for 35 minutes. Don't get worried if it browns some; some browning adds to the flavor. When I bake this, it normally gets light brown all over, so don't worry if you see if turning brown.
Tropical Tilapia (This one was awesome. I am not the world's biggest fan of blue cheese, so I only used a small amount, but it was awesome!!!)
4 (3 ounce) tilapia fillets
2 teaspoons lemon juice
1/2 teaspoon Old Bay Seasoning
4 tablespoons blue cheese, crumbled
2 teaspoons parsley flakes
4 tablespoons shredded coconut
Spray baking dish with cooking spray. Place two fillets in dish, and sprinkle with lemon juice and Old Bay.
Top with crumbled bleu cheese. Place the other two fillets on top.
Sprinkle with Parsley flakes and a little more Old Bay. Bake for 15 minutes at 375.
Remove from oven and top with coconut. Broil for 2 minutes, but watch so that the coconut doesn't burn!
Creole Tilapia (Try this one!!! Yum!!)
2 lbs tilapia fillets
1 1/2 cups tomatoes, chopped
1/2 cup green peppers, chopped
1/3 cup lemon juice
1 tablespoon olive oil
2 teaspoons salt
2 teaspoons onions, minced
1 teaspoon basil leaves
1/4 cup black pepper, coursely ground
4 drops red pepper sauce
green pepper rings
Heat oven to 500 degrees.
Place fillets in single layer in baking dish, 12-1/2 x 9 x 2 inches.
Stir together remaining ingredients except pepper rings.
Spoon over fillets.
Bake 5 to 8 minutes or until fish flakes easily with fork.
Remove fillets to warm platter.
Garnish with green pepper rings
Southwest Style Tilapia
1 1/2 lbs tilapia fillets
1/2 cup parmesan cheese, shredded
1/4 cup yellow cornmeal
2 tablespoons flour
1 teaspoon paprika
1/2 teaspoon black pepper
salt
vegetable cooking spray
Preheat oven to 400 degrees.
Combine Parmesan cheese, cornmeal, flour, paprika, pepper and salt in a bag.
Place fish in dry mixture and shake to coat each fillet.
Spray baking Dish with cooking spray; Place fish in baking dish, Spray with cooking spray, Sprinkle remaining cheese mixture over fish fillets.
Bake for 15 to 20 minutes or until fillets flakes when tested with fork

Lemon Crumb Tilapia
12 ounces tilapia fillets, thawed
1/4 cup Italian seasoned breadcrumbs
2 tablespoons grated parmesan cheese (not the canned kind)
1 teaspoon garlic salt
1 teaspoon grated lemons, rind of
3 tablespoons butter (divided)
1 tablespoon vegetable oil
1-2 tablespoon lemon juice (or use amount of juice from small lemon used above for lemon peel)
Rinse fish and pat dry.
Combine bread crumbs, parmesan cheese, garlic salt, and lemon peel on waxed paper.
Melt 2 tablespoons butter.
Dip fillets in melted butter.
Coat fillet with crumb mixture.
In nonstick skillet, melt remaining 1 tablespoon butter with oil over medium heat.
Cook fillets for 2 to 4 minutes per side or until fish flakes easily.
Sprinkle with lemon juice.
When removing fish from skillet, use a spatula or the fish will fall apart.
Alfredo Shrimp Tilapia ( I will definitely be trying this one soon! It looks awesome!)
2 1/2 lbs tilapia fillets
1 cup alfredo sauce
3/4 lb shrimp, cleaned,shelled and deveined
2 tablespoons creole seasoning
1 sweet red pepper, sliced very thin into slivers
3 tablespoons olive oil
4 tablespoons butter, divided
2 cloves garlic, finely minced
3 tablespoons grated romano cheese or parmesan cheese, for topping
Preheat oven to 425*.
Wash and dry tilapia filets, spread with olive oil and creole seasoning, to your taste.
Place in well oiled baking pan, bake for 8-10 minutes, until just white.
While fish is baking, saute slivers of red pepper in 1 tbs butter,until cooked, about 5 minutes.
Warm alfredo in a small saucepan.
In a frypan, melt 3 tbs butter, add minced garlic and cleaned, prepared shrimp, saute for about 5 minutes.
When fish is ready, remove from pan from oven.
Carefully remove fillets, 4 per plate.
Place one quarter of the red pepper slivers and one quarter of the cooked shrimp on top of fillets.
Top with 1/4 cup of alfredo, sprinkle of grated cheese and a dusting of more creole seasoning.
If you like, you can put this under the broiler for about a minute.
Beer-Battered Tilapia
3 tablespoons whole wheat flour
2 tablespoons all-purpose flour
1/4 teaspoon ground cumin
1/4 teaspoon salt (to taste)
1/8-1/4 teaspoon cayenne pepper
1/2 cup beer
1 lb tilapia fillets, cut in half lengthwise
4 teaspoons canola oil, divided
Combine whole-wheat flour, flour, cumin,salt and cayenne in a medium bowl; whisk in beer to create a batter.
Coat half the tilapia pieces in batter; heat 2 teaspoons oil in a large nonstick skillet over medium-high heat; Letting excess batter drip back in bowl.
Add fish to the skillet; cook until crispy and golden, 2 to 4 minutes per side; transfer to plate and loosely cover with foil.
Coat the remaining fish with batter and cook in the remaining 2 teaspoons oil adjust heat as necessary for browning; serve immediatly
Coconut/Lime Tilapia
36 ounces tilapia fillets
flour
1 lime, juice of
3/4 cup Egg Beaters egg substitute (liquid eggs)
1 cup plain breadcrumbs
1/2 cup coconut
1/4 teaspoon salt
1/4 teaspoon dried sweet basil leaves
1/4 teaspoon garlic salt
1/2 teaspoon pepper
cooking spray
Place flour in flat bowl. (for coating filets).
Stir lime juice and liquid egg together and put in its own bowl.
Mix breadcrumbs and coconut together. Add salt, pepper, Basil, garlic salt and place in a flat bowl.
With each filet, cover in flour, shake off excess, dip in egg/lime mix, and coat both sides with the breadcrumbs/coconut. Place on a cookie sheet that has been sprayed with cooking spray.
Bake @ 375 for 15 min (or until it flakes).

Crispy Fillet of Fish with Cream of Wheat Coating
I will cut my kids portions into strips, like 'fish sticks' -- but they're healthier fish sticks! They love them.
4 fillets of Tilapia or Flounder
1 cup cream of wheat -- not instant
2 teaspoons kosher salt
1/2 teaspoon cayenne pepper
1/2 teaspoon ground white pepper
olive oil
tartar sauce (optional)
Mix the cream of wheat with salt and peppers, place in a shallow dish (for coating fish)
Coat each fillet on both sides with cream of wheat mixture.
Cooking option 1: Pan-Fry fish in about 1/2 " of olive oil until cooked through and golden brown. (about 3 minutes on each side, depending on the thickness of the filet.)
Cooking option 2: Place coated filets on Silpat, spray with olive oil and roast at 425 degrees until done (about 15 minutes, depending on the thickness of the filet.)
Serve warm with a dollop of tarter sauce on the side. Perfect served with rice pilaf or brown rice and string beans.

Tilapia In Beer Batter
4-6 Tilapia fillets
Juice of ? lemon
2 Tbls. chopped parsley
2 Tbls. cooking oil
salt and freshly ground pepper
Oil for deep frying
BEER BATTER
2 large egg yolks
? cup beer
? cup flour
? tsp. salt
? tsp baking powder
Cut fillets into 2" pieces. Put in a bowl with lemon juice, parsley, 2 Tbls. cooking oil, and salt and pepper to taste. Heat oil for deep frying. Dip pieces of fish individually into batter, and then into hot oil. Cook, turning and submerging pieces in the oil until golden brown all over. Drain on paper towels. Makes 4 servings.

Apply a thin layer of Mayo on the top of the fish fillet. Cover with Italian Style bread crumbs, add salt, pepper, garlic powder, and a couple pieces of butter...Then broil in the oven for a few minutes. Watch it very carefully, or it will burn.
And buy fresh! The reason your fish tastes fishy is because it's not fresh!
Look, this is a great recipe and a very simple and easy one, too. Add garlic powder, powdered cumin (very delicious), juice of half a lemon, salt, and some chopped cilantro to the fish. You can also use dill weed or celery instead of the cilantro, all give a great taste. Now you can simply put the fish in a greased casserole and bake in the oven for 10 minutes, then broil for 5 minutes. you WILL NOT believe the delicious smell!
Also you can bread them and deep-fry them, but it's more healthy to eat them baked. I guarantee they won't taste fishy at all. Hope that helps.
