Bhajia(Bhaji) Recipe?
Any one can give me recipe for nice crispy spinach Bhajia?
My Mom is good at it, but won't share the recipe with her daughter-in-law !!!!!!!

yes!2 bunches spinach (I used a small package of frozen spinach)
2 cloves finely chopped garlic
2 tablespoons chopped onion
1/4 tsp cumin seeds
salt to taste
few pinches cayenne
1 Tbs lemon juice
Remove the stems and roots from the spinach and wash very thoroughly to
remove any dirt or sand that might be trapped between the leaves. Drain
the leaves completely and cut into medium size pieces, as if you were
cutting lettuce for a salad. (Omit these steps if using frozen spinach.)
"Fry" the garlic, onion, and cumin seeds in liquid or in a coated pan.
When the onion turns brown add the spinach pieces. Stir the spinach for a
few minutes. Now add the salt if desired and the cayenne, raise the heat
and stir the spinach quickly for 10 more minutes. By now the spinach will
have shrunk into a small, dark-green mound. Stir in the lemon juice and
remove from the heat. Serve immediately. This dish goes well over rice.
Serves three to four.

KK you can do two things. Try the first recipe for something like the traditional indian recipe and if you wanna do something original try the second one.
#1 recipe
1. On a skillet heat up some vegetable oil
2. Add onion (as much as you like, i usually use half for about a medium skilletfull precooked spinach)
3. Add a little garlic and ginger paste
4. Add a little salt and when the onions turn golden brown add the spinach. Make sure to wash and dry them before you cook
5. Then cook for 5 minutes on high heat (covered for first 2 minutes)
6. Add a little turmeric, coriander and ginger
#2 Now this recipe is a bit different,
1. On a skillet heat up some vegetable oil
2. Add onion (as much as you like, i usually use half for about a medium skilletfull precooked spinach)
3. Add some teriyaki sauce and add the spinach.
4. Cook for 5-10 minutes
5. Add some baked beans, salt and coriander leaves and some permesan cheese.
6. Mix and serve.
chop spinach finely, add dry gram flour and spices as per your taste.. if requires add water ( very very little) , deep fry.. try it.. same for cabbage too...
I guess its Bhajia (like pakoras). Here's one that I like:
Buy fresh baby spinach, remove its stem, wash each and every leaf and dry it (I know its a lot of work but its yummy). Meanwhile, take gram flour (besan). Add enough water to make a thick paste. Add salt and other spices like chilli pd, ajwain, little turmeric pd. Dip each spinach leaf in the paste and deep fry. Have it with tomato ketchup. Tastes yummy!

8 ounces gram flour (chickpea flour)
1/2 teaspoon chili powder
1 teaspoon turmeric
1 teaspoon baking powder
1/2 teaspoon fennel seeds

2 large onions, sliced
3 green chilies, finely chopped
1 cup fresh coriander leaves, chopped

Sift the flour, chilli powder, turmeric, baking powder and salt together in a bowl. Get as much air into it as possible.
Crush the seeds in mortar and pestle, add to the bowl.
Now add the green chilli, onions and the chopped coriander. Mix in some water to make a thick batter that holds the ingredients together.
Heat the oil in a wok. Drop spoonfulls of the batter into the oil and fry till golden brown. Place on kitchen paper to allow the excess oil to run off.
These can be eaten as they are or with a dip
take spinach cut if finely,soak in water for 5 minutes with salt.take 1big onion finely chopped,2green chillies,4pods garlic,2-3 spoons of grated coconut.grind chillies and garlic ,not very fine. take 1spoon of oil in a pan,fry onion till it becomes tranparent add salt chillies nad garlic mixture fry till the smell of garlic goes then add coconut fry and then add bhaji to it .do not add water cook on low flame foer 10 mins. your spinach is ready to eat.
