Twice baked potatoes with butter, sour cream, cheese, and bacon bits....yummmm
Smashed Potatoes
12ish red potatoes
2 ? tsp salt
? cup olive oil
? tsp rosemary
Chives or scallions (to taste)
Sour cream (to taste)
1. Boil potatoes with 2 tsp of salt.
2. Once water begins to boil, reduce to simmer and cook covered until potatoes can be easily pierced with a fork.
3. While they are cooking, set up a double layer of paper towels on a countertop.
4. Remove potatoes and let them drain on paper towels for about 2 minutes.
5. Flatten potatoes with spatula to about ? inch thickness.
6. Cover a baking sheet with aluminum foil and parchment paper and let potatoes cool completely on it.
7. Cover potatoes with ? tsp of salt, 3/4 tsp of rosemary and pour olive oil over them. Be sure to cover both the top and the bottom of the potatoes.
8. Roast potatoes at 450 degrees for about 30 minutes, turning once. Potatoes should be crispy and deep brown around the edges.
9. Top with a spoonful of sour cream. Garnish sour cream with finely chopped chives. Serve hot.
i like to cut the potato into slices and then put them in a 9 by 13 pan add lots of yummy spices and bake for 20 min. yummy
I love fingerling potatoes roasted in their skins with olive oil, butter, salt, pepper and a few heads of garlic
during the summer throw all the ingredients together in foil roasting bags and put on the grill to keep from heating up the house

i like finger fries the most.
it is very easy to make them. just you have to boil the potatoes and then cut them in small sticks shape and then you can fry it in deep oil till they become brown.
my favorite way to make a potatoe is either mashed or making chips out of them.
I peel and boil them, and then mash them up with sour cream, milk, butter, and cream cheese. Put a little garlic salt, and white or black pepper. mmmhmmm!
Boil 3 large potatoes in salted water til easily pierced by a fork. Slip the skins off, let potatoes cool. Grate potatoes on large side of the grater. Butter a baking dish, layer grated potato, dot with butter, sprinkle a light layer of grated cheddar on top, repeat, making the last layer of cheese a little heavier. Bake until cheese is bubbly.

2kg Large potatoes, peeled.
Vegetable oil for deep frying.
(I) Wash and thoroughly dry potatoes and cut lengthwise into 10mm sticks
.
(II) Heat oil and lower chips into the pot a few at a time into moderately hot oil. Cover and cook for about 4 minutes, or until pale golden.
(III) Remove and place on paper towels. Repeat with rest.
(IV) When ready to serve reheat oil, and cook again in batches, until crisp and golden. Drain on a paper towels.
Note.
Potatoes needn’t be in sticks and at the end of step 2 they can be stored refrigerated several hours ahead or wrapped and frozen.

Balsamic & Basil Herbed Potatoes
Ingredients
1 Tbsp. Garlic Garlic?
1 tsp. Seasoned Salt
2 Tbsp. Balsamic & Basil Dipping Oil
2 lbs. quartered baby red potatoes
1 sliced onion
1 sliced green pepper
Directions
Combine all ingredients; toss until coated. Bake, uncovered, at 350° for 1 hour or until tender. Makes 4-5 servings.

MY favorite way to make potatoes is to peel,wash and dice them and fry in bacon fat with diced onions,salt and pepper.
I generally cut potatoes into small dices. Heat oil in a pan add mustard seeds, cumin seeds and then the diced potatoes and sauté them. Season them with pepper and salt.
When crisp enough, use a youghurt sauce or else ketchup and it's Yumm!!!
