Using 7 overripe bananas , I need to make banana bread , help !?
Answers:
to use all seven, make 2 loaves
3 or 4 ripe bananas, smashed
1/3 cup melted butter
1 cup sugar (can easily reduce to 3/4 cup)
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda
Pinch of salt
1 1/2 cup of flour
No need for a mixer for this recipe. Preheat the oven to 350°F. With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Pour mixture into a buttered 4x8 inch loaf pan. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.
I like chopped walnuts or pecans in mine about 8 oz. will do

Cream sugar and shortening. Add banana's and egg. Sift flour and other ingredients together then add to banana mixture (only enough to moisten). Pour into a greased loaf pan and bake at 375 for 45-60 minutes.

1 package (8 oz) softened cream cheese
1/2 cup softened butter/margarine
1 1/4 cup + 2 Tablespoons sugar
2 eggs
3 medium mashed bananas
1 teaspoon vanilla extract
2 1/4 cups flour
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 cup chopped pecans
1 teaspoon cinnamon
Beat cream cheese, butter and sugar. Add eggs and beat well. Add bananas and vanilla Combine flour, baking powder, baking soda; gradually add to creamed mixture. Combine pecans, 2 Tablespoons sugar and 1 teaspoon ground cinnamon. Add half to batter. Transfer to a greased 9x13. Sprinkle with remaining topping. Bake at 350 for 25-30 minutes.
You can also mash and freeze the bananas for future use.
