FRIED APPLES

INGREDIENTS:
8 medium Granny Smith apples, chopped
1/4 cup butter
1/2 cup brown sugar
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
PREPARATION:
Melt butter in a heavy skillet over medium-low heat. Add apples, brown sugar, cinnamon and nutmeg. Sauté 15 to 20 minutes, or until apples are tender. Serve as a side dish for pork or with breakfast. Serves 6.

Peel, core and chop apples, add lemon juice, sugar (brown sugar if you have it) and cinnamon (maybe a little nutmeg) to taste. You could leave it in the fridge overnight to let the flavors mingle.
Mix well and saute in a little butter or PAM and cook until soft.

I like to use the Granny Smith apples for pie, start by peeling the apples and coring them then cutting them into slices. You then saute them in butter and adding sugar and cinnamon. Saute them about half way and then add them to a cooked pie crust, add the apples with butter spread out, the butter will thicken the mix and do your fancy lattice work with uncooked pie crust, brush the outter crust with an egg wash. Finish baking at 350 until crust is golden brown. Enjoy

Apple Pie Filling
INGREDIENTS


* 18 cups sliced peeled baking apples (about 6 pounds)
* 3 tablespoons lemon juice
* 4-1/2 cups sugar
* 1 cup cornstarch
* 2 teaspoons ground cinnamon
* 1 teaspoon salt
* 1/4 teaspoon ground nutmeg
* 10 cups water
DIRECTIONS



In a large bowl, toss apples with lemon juice; set aside. In a Dutch oven over medium heat, combine sugar, cornstarch, cinnamon, salt and nutmeg. Add water; bring to a boil. Boil for 2 minutes, stirring constantly. Add apples; return to a boil. Reduce heat; cover and simmer until the apples are tender, about 6-8 minutes. Cool for 30 minutes. Ladle into freezer containers, leaving 1/2-in. headspace. Cool at room temperature no longer than 1-1/2 hours. Seal and freeze; store up to 12 months. Yield: 5-1/2 quarts (enough for about five 9-inch pies).

Fried Apples

Slice and core some apples. I like a semi tart apple like a Gala or Jonagold. I find Granny Smith apples take too long to cook and are too tart and Delicious fall apart too quickly.

In a skillet melt some real butter over medium heat.
Throw in the apples and cook for a bit stirring frequently. Cover the skillet and let the apples steam for a few minutes.
Add a sprinkle of cinnamon and tiny bit of nutmeg. Toss in a TBSP or two of brown sugar. Stir it all together and serve. Really nice with pork chops or over pancakes, french toast, waffles or ice cream!
