Can you bake muffins on a grill?
I just made muffin mix, and my oven is out. I have a large gas grill with temp settings... Can I bake these muffins on the the grill?

put a onen baking pan upside down on the rack so the fire isnt directly touching the muffin pan, and go for it, i have done bread that way, and it rises fine, just watch it for burning

Nope. They have to bake. What you might try, and I doubt this will work but it has the best chance, put a terracotta pot or something ceramic OVER the pan of muffins after sitting them in the grill and they might bake
If you have a large heavy cast iron pot with a cover/lid or Dutch oven that your muffin tin will fit in then the answer is yes. You will need to brace it up off the floor of your Dutch oven so that the bottoms don't burn. Don't just place the muffin tin on the grate. You'll have a big mess and maybe a fire as well. Just make sure that the pot you are going to use has a lid.
I found this recipe for corn muffins on the grill, Im sure if you follow the cooking procedures, your muffins will come out fine
GRILLED BUTTERMILK CORN MUFFINS
1 egg
1/2 tsp. baking soda
1 tsp. sugar
1 1/2 c. cornmeal
1/2 c. flour
1/4 c. butter
1 1/2 c. buttermilk
3 tsp. baking powder
1 tsp. salt
Prepare coals for grilling. In a bowl, mix egg, buttermilk and baking soda. Stir in remaining ingredients, mixing until well blended and smooth. Brush muffin pans with oil or melted butter. Fill cups 2/3 full. Place on grill rack, cover with foil or a domed lid and bake 10 to 15 minutes. Serve hot and spread with butter. Makes 12 to 14 muffins.

Yes, you can bake in the grill, using indirect heat (you don't want the flames directly under the item) and the lid closed.
