All right ... So I'm going to bake a cake for my dad for Father's Day and his b'day (which are back to back), and I really don't feel like shopping for a lot of ingredients. Does anyone have any recipes for cakes that really don't require too many ingredients? I have things like coconut milk on hand and crap like that, but I have no butter. o_O. Oil works though, right? Or maybe I'm being stupid. Anyways, enough ranting. ^^" Experimentation and different ingredients and techniques are okay, just as long as the list of needed things isn't too long. Thanks a bunch!

Coconut-Pecan Pudding Cake
Prep Time: 15 min
Total Time: 50 min
Makes: 16 servings
1 pkg. (2-layer size) white or yellow cake mix
1 pkg. (4-serving size) JELL-O Vanilla Flavor Instant Pudding & Pie Filling
1-1/3 cups water
4 eggs
1/4 cup oil
1-1/3 cups BAKER'S ANGEL FLAKE Coconut
1 cup chopped PLANTERS Pecans
PREHEAT oven to 350°F. Beat cake mix, dry pudding mix, water, eggs and oil in large bowl with electric mixer on low speed until blended. Beat on medium speed 4 minutes. Stir in coconut and pecans.
POUR evenly into 3 greased and floured 9-inch round cake pans.
BAKE 35 minutes or until toothpick inserted in centers comes out clean and cake begins to pull away from sides of pans. (Do not underbake.) Cool 15 minutes; remove from pans. Cool completely on wire racks. Fill and frost as desired.

SIMPLE BANANA NUT CAKE
1 box white cake mix
1/3 cup oil
1 1/2 cup milk
3 eggs
1 box banana cream pudding mix
1 cup chopped pecans
Mix all ingredients together. Pour into a greased 13 x 9 inch cake pan. Cook at 350°F for 32 to 36 minutes.
Tastes like banana nut bread. If you want icing, Pillsbury cream cheese icing makes for a good combination.
Try using different kinds of pudding mixes
Coconut Cake
Cake:
Basic 1-2-3-4 Cake but substitute 1 cup canned, unsweetened coconut milk for regular milk, recipe follows
Filling
3/4 cup sugar
1 cup sour cream
4 tablespoons milk
1/2 cup flaked, sweetened coconut
Frosting
1 recipe 7-minute Frosting
Flaked, sweetened coconut, for sprinkling
Follow directions for Basic 1-2-3-4 Cake, substituting coconut milk for regular milk. While cake is baking, prepare filling. Stir together sugar, sour cream, milk, and coconut in a bowl until well blended. Remove cake layers from oven and allow cake to remain in pans as you prepare to stack and fill. Remove first layer and invert onto cake plate. Using the wrong end of a wooden spoon, poke holes approximately 1-inch apart until entire cake has been poked. Spread 1/3 of filling mixture on cake layer. Top with second layer, repeat process. Top with last layer and repeat process again. (As I stack layers together I stick them with toothpicks to prevent cake from shifting).
Prepare 7-Minute Frosting. Frost top and sides of cake. Sprinkle top and sides of cakes with additional coconut.
Yield: 1 (3-layer) cake

Basic 1-2-3-4 Cake:
1 cup (2 sticks) butter, at room temperature
2 cups sugar
4 eggs
3 cups sifted self-rising flour
1 cup milk
1 teaspoon pure vanilla extract
Preheat oven to 350 degrees F.
Grease and flour 3 (9-inch) cake pans. Using an electric mixer, cream butter until fluffy. Add sugar and continue to cream well for 6 to 8 minutes. Add eggs, 1 at a time, beating well after each addition. Add flour and milk alternately to creamed mixture, beginning and ending with flour. Add vanilla and continue to beat until just mixed. Divide batter equally among prepared pans. Level batter in each pan by holding pan 3 or 4 inches above counter, then dropping it flat onto counter. Do this several times to release air bubbles and assure you of a more level cake. Bake for 25 to 30 minutes or until done. Cool in pans 5 to 10 minutes. Invert cakes onto cooling racks. Cool completely and spread cake layers with your favorite frosting to make a 3-layer cake.

7-Minute Frosting:
1 1/2 cups sugar
1/4 teaspoon cream of tartar or 1 tablespoon white corn syrup
1/8 teaspoon salt
1/3 cup water
2 egg whites
1 1/2 teaspoons pure vanilla extract
Place sugar, cream of tartar or corn syrup, salt, water, and egg whites in the top of a double boiler. Beat with a handheld electric mixer for 1 minute. Place pan over boiling water, being sure that boiling water does not touch the bottom of the top pan. (If this happens, it could cause your frosting to become grainy). Beat constantly on high speed with electric mixer for 7 minutes. Beat in vanilla.
Yield: Frosting for 1 layer cake or approximately 8 to 12 cup cakes

Cooking time: 7 minutes

Pineapple Mandarine Orange Cake
1 (18.25 ounce) package yellow cake mix
1 (11 ounce) can mandarin oranges, with juice
4 eggs
1/4 cup vegetable oil
1 (16 ounce) package frozen whipped topping, thawed
1 (15 ounce) can crushed pineapple, drained
1 (3.5 ounce) package instant vanilla pudding mix
1. Mix together cake mix, canned oranges with juice, eggs, and oil. Pour batter into three greased and floured 8 inch round pans. Layers will be thin.
2. Bake at 350 degrees F (175 degrees C) for 25 to 30 minutes, or until cake tests done. Cool layers on wire racks.
3. Mix together whipped topping, drained pineapple, and instant pudding mix. Fill and frost the cooled cake. Refrigerate until ready to eat.
