Yeah, these recipes above sound good. But my question to you is why are you cooking for one?
I live alone and cook two or three times a week and cook for four; I'll zip lock baggie and freeze the leftovers for other days and nights! I have more energy than time!
.
I'd mix the sausages with the rice, add the veggies, toss in some garlic, cook the chicken if you like, take the meat off the bones and add it to the rice mixture........instant etouffe!
Mix, match, and be creative. Here are some ideas I thought up using your list of ingredients:
Mac and cheese with broccoli
Pasta in a sauce of butter, salt, pepper (I assume you have those), and garlic, with broccoli on the side.
Pasta, topped with sauteed sausage and garlic, with tomato sauce (spaghetti sauce)
Baked, garlic seasoned chicken drum sticks with buttery mashed potatoes (made from your mini potatoes) and buttery, peppered corn on the cob.
Chicken and rice saute- Remove the chicken from the bones, saute with some garlic, pepper, salt, and maybe some of the available veggies, and serve over pasta or rice.
Have fun!
You could cut up the sausage and cook it and good the mac & cheese and mix them together and have the broccoli on the side.
why dont u cook everything and freeze what u have left over, that way u wont have to cook the next night
