Does anyone have a simple and easy recipe for muffins?
i've tried one, but it didn't really turn out too well.

MUFFINS
1 egg
3/4 cup milk
1/2 cup vegetable oil
2 cups all-purpose flour
1/3 cup sugar
3 teaspoons baking powder
1 teaspoon salt
Heat oven to 400 F. Grease bottoms only of about 12 medium muffin cups, 2 1/2 x 1 1/4 inches.
Beat egg stir in milk and oil. Stir in remaining ingredients all at once just until flour is moistened (batter will be lumpy). Fill muffin cups about 3/4 full.
Bake until golden brown, about 20 minutes. Immediately remove from pan. About 1 dozen muffins.
Blueberry muffins: Stir in 1 cup fresh or 3/4 cup frozen blueberries (thawed and well drained) with the milk.
Oatmeal-Raisin muffins: Stir in 1 cup raisins with the milk. Decrease flour to 1 cup; stir in 1 cup quick-cooking oats, 1/2 teaspoon ground nutmeg and 1/4 teaspoon ground cinnamon with the flour.
Serving Size: 6

Raspberry White Chocolate Muffins
2 cups Bisquick
1/2 cup white baking chips
1/3 cup sugar
2/3 cup milk
2 tablespoons oil
1 egg
1 cup raspberries
Pre-heat oven to 400 degrees F.
Grease bottoms only of muffin tins or use paper liners.
Stir all ingredients except berries in a large bowl, just until moistened. Fold in berries. Divide the batter into the muffin cups. Bake 15 to 18 minutes. Cool 5 minutes, remove from pan. Serve warm.
You can sift confectioners' sugar over tops or drizzle a glaze over each muffin.

Yup, try the ones in the Jiffy box, there are so many different varieties. Just go by the directions. They are pretty tasty.
Simple Apple Muffins
Ingredients:
1 cup brown sugar, packed, divided
1/2 cup corn oil
1 egg, beaten
1 teaspoon vanilla
1 1/2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup apples, peeled and chopped
1/2 cup buttermilk
1/4 cup walnuts (optional)
1/2 teaspoon cinnamon
Steps:
1. Preheat oven to 325-degrees F.
2. Grease muffin tins or use paper liners.
3. In a large bowl, blend 3/4 cup brown sugar, oil, egg and vanilla with a wooden spoon.
4. Add flour, baking soda and salt.
5. Stir in apple and buttermilk and mix throughly until combined well.
6. Spoon batter into prepared muffin tins.
7. In a small bowl combine remaining 1/4 cup brown sugar with remaining ingredients (walnuts and cinnamon).
8. Sprinkle over muffins.
9. Bake for 30-40 minutes or until muffins are browned and toothpick comes clean when inserted in middle.

400g plain flour
175g caster sugar
1 tablespoon baking powder
1 finely grated rind of lemon
1/2 teaspoon salt
284ml carton buttermilk
2 eggs, beaten
85g butter, melted
250g fresh or frozen blueberries, or mixed summer fruits,used straight from frozen
1) Preheat the oven to 200 degree C / Gas 6 / fan oven 180 degree C. Butter a 12-hole muffin tin.
2) In a large bowl, combine the flour, sugar, baking powder, lemon rind and salt. In a separate bow, mix together the buttermilk, eggs and butter.
3) Make a well in the center of the dry ingredients and pour in the buttermilk mixture, stir until the ingredients are just combined and the mixture is quite stiff, but don't over-mix.
4) Lightly fold in the blueberries, then spoon the mixture into the tins to fill generously.
5) Bake for about 25 minutes or until risen and pale golden on top. Leave to cool in the tin for about 5 minutes before turning out on to a wire rack, as the muffins are quite delicate when hot.
This is another easy one

250g plain flour
25g cocoa powder
2 teaspoons baking powder
1/2 teaspoon bicarbonate of soda
85g each dark and white chocolate, broken into chunks
100g milk chocolate, broken into chunks
2 eggs, beaten
284ml carton sour cream
80g light muscovado sugar
80g butter, melted
1) Peheat the oven to 200 degree C/Gas 6 / fan oven 180 degree C. Butter 11 holes of a muffin tin. In a large bowl, combine the flour, cocoa, baking powder, bicabonate of soda and sift for 2 to 3 times, set aside.
2) In a separate bowl, mix together the eggs, sour cream, sugar and butter till creamy then add flour mixture and stir until just combined, add chocolates into the mixture, toss to combine, the mixture would be fairly stiff, but don't over mix. Spoon mixture into the holes to generously fill.
3) Bake for 20 minutes until will risen. Leave in the tins for about 15 minutes as the mixture is quite tender. Remove from the tins and cool on a wire rack.
( I love this chocolate muffin when it is still a bit warm... the chocolate is gooey!!!!!)
