Answers:
Soft Pretzels
3 1/2 cups all-purpose flour
2 tablespoons sugar
1 teaspoon salt
1 package active dry yeast
1 cup water
1 tablespoon margarine
1 tablespoon water
1 egg yolk; beaten
Coarse salt for topping
Mix 1 cup flour, sugar, salt and undissolved yeast. Heat 1 cup water and margarine to 120 to 130 degrees. Gradually add to dry ingredients; beat 2 minutes at medium speed of mixer. Add 1/2-cup flour. Beat at high speed 2 minutes. Stir in enough additional flour to make soft dough. On floured board, knead 5 minutes. Set in greased bowl; turn to grease top. Cover and let rise in warm, draft-free place 40 minutes. Divide dough into 12 equal pieces. Roll each into a 20-inch rope. Shape into pretzels or other shapes. Place on greased baking sheets. Cover; let rest 5 minutes. Mix egg yolk and 1 tablespoon water; brush on pretzels. Sprinkle with coarse salt. Bake at 375 degrees 15 minutes or until done. Cool on racks.
Pretzels
1 1/2 cup warm water
1 1/8 tsp. active yeast (1 1/2 pkg)
2 Tbs. brown sugar
1 1/8 tsp. salt
1 cup bread flour
3 cups regular flour
2 cups warm water
2 Tbs. baking soda
To taste coarse salt
2-4 Tbs. butter (melted)
Sprinkle yeast on lukewarm water in mixing bowl; stir to dissolve. Add sugar, salt, and stir to dissolve; add flour and knead dough until smooth and elastic. Let rise at least 1/2 hour.
While dough is rising, prepare a baking soda water bath with 2 cups warm water and 2 Tbs. baking soda. Be certain to stir often.
After dough has risen, pinch off bits of dough and roll into a long rope (about 1/2 inch or less thick) and shape. Dip pretzel into soda solution and place on greased baking sheet. Allow pretzel to rise again. Bake in a 450 degree oven for about 10 minutes or until golden. Brush with melted butter and enjoy!
Toppings:
After you brush with butter try sprinkling with coarse salt.
Or for Auntie Anne's famous cinnamon sugar, try melting a stick of butter in a shallow bowl (big enough to fit the entire pretzel) and in another bowl make a mixture of cinnamon and sugar. Dip the pretzel into the butter, coating both sides generously. Then dip again into the cinnamon mixture.

2 - 16 oz. loaves frozen bread dough
1 egg white, slightly beaten
1 teaspoon water
Coarse salt
Separate thawed bread into 24 - 1 1/2" balls. Roll each ball into a rope 14 1/2" long. Have children plan and design pretzel shapes (letters or numerals). Put pretzels one inch apart on greased cookie sheet. Let stand for 20 minutes and brush with combined egg white and water. Sprinkle with coarse salt. Place a shallow pan containing 1" of boiling water on bottom rack of oven; bake pretzels at 350 degrees on rack above water for 20 minutes or until golden brown.

Ingredients:
2 1/4 teaspoons yeast
1 1/4 cups warm water
1/4 cup packed brown sugar
2 cups bread flour
1 cup water
1 tablespoon baking soda
Coarse salt (optional)
2 tablespoons butter, melted (optional)
Steps:
1. In a small bowl, combine yeast and warm water.
2. Let stand for 5 minutes while you prepare the next step.
3. In a large bowl, place the brown sugar, 1 cup flour and the yeast mixture (when it is ready).
4. Mix well.
5. Then, stir in enough of the all-purpose flour to make a soft dough.
6. Turn dough onto a well-floured surface and knead for about 3 minutes.
7. Cover and let rest 20 minutes.
8. Cut dough into 12 pieces.
9. Roll each into a 12-15-inch long rope and shape into pretzels.
10. In a shallow bowl, add 1 tablespoon baking soda to 1 cup water.
11. Dip each finished pretzel shape quickly into water, shaking off excess.
12. Place immediately on greased baking sheet. Sprinkle with salt (if desired).
13. Bake at 475 degrees for 6 minutes or until golden brown.
14. Remove from pan quickly and serve with melted butter brushed on top, or with your favorite dip.
