Need Scallop recipe?

I bought some frozen scallops at the store and I want to know how I should cook them because I have never cooked them. How long should I defront for and How long should I grill them for? And should I put them in any kind of sauce?


Answers:
GRILLED SEA SCALLOPS

(This recipe also works well with large shrimp.)

1 1/2 to 2 lb. sea scallops (about 24 pieces)
1 sweet red pepper, cut into bite-size squares
1 sweet green pepper, cut into bite-size squares
1/2 c. orange juice
1/4 c. chopped scallions including green parts
2 tbsp. unsalted butter
Salt and freshly ground pepper as desired
1 sm. ripe tomato, peeled, seeded and diced (about 1/4 c.)
4 tsp. olive oil
2 tbsp. chopped fresh coriander or parsley

Prepare a charcoal fire and allow coals to burn until ash gray. Set grill 4 to 6 inches above coals. Place 6 pieces of scallop on each skewer, alternating with pieces of red and green pepper. Keep cold until ready to grill.
In small saucepan, combine orange juice and scallions. Reduce by half over grill or on top of stove. Add butter, tomatoes, salt and pepper. Keep warm while cooking brochettes.

Brush brochettes on all sides with oil, and place on hot grill. Cook until done, turning occasionally. Place brochettes on serving plates, pour over sauce, and garnish with coriander or parsley.

Makes 4 servings.



PAN FRIED SEA SCALLOPS

large sea scallops
butter
minced garlic
lemons
parsley
paprika

Clean scallops.
Melt 3-4 tbsp butter in skillet. Add scallops and minced garlic to skillet.

Allow to cook for a 3-4 minutes, turning over. As scallops begin to brown slightly, squeeze fresh lemon over scallops.

Sprinkle with parsley and paprika to taste. Cook to desired browness and add additonal lemon and butter if needed.

Do not allow scallops to burn. Add more butter if needed for moisture. Let scallops turn very brown on each side.

Serve alone or over your favorite pasta

BACON WRAPPED SCALLOPS

24 scallops
bacon
brown sugar
toothpicks

Wrap scallops with bacon. Skewer with toothpicks.
Sprinkle brown sugar on top. Broil 2-3 minutes, flip and repeat.

Defrost, pat dry on kitchen paper, small amount of butter and oil, non stick pan, garlic. Fry garlic in oil and butter till soft add scollops fry gently on each side for only a few mins, then add a little ouzo to flambe them. annaset is wonder full with fish. Most people make the mistake to over cook fish, dont as it goes dry and tough, i live in the med so eat fish dishes all the time.... good luck

Bacon Grilled Scallops

1/4 c. bourbon
1/4 c. chopped scallions
2 tbsp. maple syrup
1 tbsp. soy sauce
2 tsp. Dijon mustard
1/4 tsp. ground pepper
1 lb. sea scallops
1/4 lb. slices bacon - 3 in.

PREPARATION:
1. In a bowl, combine the bourbon, scallions, maple syrup, soy sauce, mustard, and pepper. Stir in the scallops. Cover and refrigerate for 1 hour.
2. Prepare the grill or heat the broiler. Wrap the scallops in bacon and thread on skewers. Grill or broil 4 inches from the heat, turning once, until the bacon is crisp and the scallops are opaque, about 5 minutes.


Deep Fried Scallops

2 cups scallops, cut to about 3/4-inch cubes if large
1 cup flour
1 teaspoon salt
1 teaspoon paprika
2 eggs
2 tablespoons water
fine dry bread crumbs

PREPARATION:
If scallops are large, cut into 3/4-inch cubes. Dry completely with paper toweling or clean towels. In a bowl, combine flour, salt, and paprika. In another bowl, whisk eggs with water. Put bread crumbs in a third bowl.

Dip scallops in the flour mixture, then dip in egg, then in the bread crumbs. Fry in hot oil at about 370° until nicely browned, about 2 minutes.
Serves 6.

Try this :

Heat Oven on Broil:

-Sear Scallops w/ a lil'bit Olive Oil on pan ...let the natural sugars caramelize them a lil'

-Put Goat Cheese on top of scallops and BROIL for just a few till the cheese gets a lil'melted

Serve with Spinach or Mixed Baby Greens
& a Mustard Shallot Vinegrette
