FAST FRIED CHICKEN WHITE GRAVY
4 cups whole milk
1 cup cream
1/2 cup butter
1/4 cup flour
1/8 cup diced chives
1/4 cup finely chopped onion
1 tablespoon salt (to taste)
1 tablespoon pepper
3 chopped cloves of garlic
a pinch of sage
In a large saucepan cook onions, chives, and garlic in the butter until onions are translucent. DO NOT BURN BUTTER.
Add flour; stir for about a minute. Quickly whisk in milk and cream. Add salt and pepper to taste.
Whisk gravy constantly until it becomes thick and creamy.
Great with fried chicken, potatoes, pot pie fillings, and many others!
Oven Fried Chicken
* 1 tablespoon butter
* 2/3 cup all-purpose flour
* 1 1/2 teaspoons paprika
* 1 1/4 teaspoons salt
* 1/4 teaspoon pepper
* 3 to 3 1/2 pounds chicken pieces
Heat oven to 425°. Put butter in a 13x9x2-inch baking pan; place the pan in the oven to melt butter.
Meanwhile, mix flour, paprika, salt, and pepper. Coat chicken pieces with the dry mixture; place skin sides down in hot melted butter in baking pan.
Bake chicken, uncovered, for 35 minutes; turn chicken pieces. Bake for about 15 to 20 minutes longer, or until juices run clear from thickest pieces.

Fried Chicken Salad
2 whole skinless, boneless chicken breasts (about 2 1/2 pounds)
2 cups all-purpose flour
2 teaspoons salt
1 1/2 cups ranch dressing
1/2 cup milk
1 large egg
1 teaspoon Tabasco sauce, or to taste
1/2 cup plus 1 tablespoon vegetable oil
1 head romaine lettuce, shredded
1 pint cherry tomatoes, halved
1. Place each chicken breast in a plastic bag and pound flat (about 1/2 inch thick). Cut into thin strips.
2. In a shallow bowl, mix the flour and salt. In a medium bowl, whisk 1 cup of the ranch dressing with the milk, egg and Tabasco sauce.
3. Working in batches, dredge the chicken strips lightly in the flour, dip into the ranch batter, then coat with flour again and transfer to a sheet of wax paper.
4. Heat 3 tablespoons of the oil in a large nonstick skillet over medium-high heat until rippling hot. Add enough chicken strips to cover the bottom of the pan. Fry until golden and cooked through, about 3 minutes on each side. Transfer the chicken to a paper towel-lined plate. After the first batch, discard the oil, wipe the pan clean with a paper towel and heat another 3 tablespoons of oil. Fry the remaining strips, using fresh oil for each batch.
5. In a large bowl, toss the lettuce and tomatoes with the remaining 1/2 cup of ranch dressing, or to taste. Divide among 4 plates and top with the chicken strips.
In the south, the way you prepare fried chicken is simple. First you cut up and wash the chicken and then soak it in milk. When you remove it from the milk dredge it in flour with some salt and pepper. Fry in a cast iron skillet until golden brown.
BUTTERMILK FRIED CHICKEN
3 lbs of chicken (desired pieces)
1 1/2 c. buttermilk
2 c. flour
vegetable or peanut oil (for frying)
salt and pepper
*Place chicken in gallon size freezer bag.
*Add buttermilk and 1 tbsp. salt & 1/2 tsp. pepper
*Seal and refrigerate for at least 2 hours (the longer the more tender)
Put 2 cups flour, 2 tsp. salt and 1/2 tsp. pepper in shallow dish. (Or you can put in paper bag and shake)
Make sure pieces are completely covered in flour. (shake off excess)
Fry in 350 degree oil for appx. 20-25 minutes.

chop it and pop it in pan with a stir fry sauce and your favourite veg and onions. Failing which any jars of sauce, chicken chasseur is a nice one. Good luck
Super Easy Oven Fried Chicken:

4 chicken breasts
1 1/2 cups all-purpose flour
1/2 cup melted butter
garlic powder
salt
pepper
1. Rinse chicken breasts and pat dry.
2. Season with your choice of seasonings.
3. Coat chicken in flour and lay in 9x13 baking dish.
4. Pour melted Butter over chicken.
5. Bake in preheated 400° oven for 45 minutes.
6. Check often after 35 minutes to see if crust is brown and crispy.
7. I serve with mashed potatoes or new potatoes and black eye peas.

Southern-Fried Chicken
1 3 lb chicken, cut up
1/3 cup butter milk
1/4 teaspoon freshly ground pepper
1/2 cup flour
1 teaspoon salt
2/3 cup lard or oil, lard will give the best flavor.
1. Combine flour, salt and pepper in a paper or plastic bag. Dip chicken in the buttermilk. Shake one or two pieces of chicken in bag to coat.
2. In a large deep frying pan, melt lard over medium-high heat to 375 degrees. Add chicken pieces and cook turning frequently until brown and crisp, 20 to 25 minutes. Drain on paper towels.
Crispy Sesame Fried Chicken
INGREDIENTS:
1/2 (3 pound) whole chicken, deboned and cut into bite size pieces
1/2 teaspoon ground black pepper
salt to taste
1 teaspoon garlic powder
1 cup rolled oats
1/4 cup toasted sesame seeds
1 tablespoon chicken bouillon powder
1/4 teaspoon monosodium glutamate (MSG)
1/4 teaspoon curry powder
3/4 cup white rice flour
1/4 cup cake flour
1/2 teaspoon salt
3/4 cup chicken stock
1 teaspoon onion powder
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
2 quarts vegetable oil for frying
DIRECTIONS:
Coat chicken with 1/2 teaspoon black pepper, salt, and garlic powder.
Chill for 4 hours.
In a medium bowl, mix together oats, sesame seeds, 1/2 teaspoon salt, chicken granules, and monosodium glutamate.
Set aside.
In another bowl, combine rice flour, cake flour, 1/2 teaspoon salt, onion powder, basil, oregano, and chicken stock.
Dip the bite size chicken into the chicken stock mixture, and roll in sesame seed mixture.
Heat oil to 365 degrees F (185 degrees C). Fry the chicken till golden.

One of the geatest misconceptions about fried chicken is that you seaon the flour. SEASON THE CHICKEN! Salt, fresh craked pepper thyme, oregano and garlic. Mix well and rub your chicken with it. Then let it stand for a few hours, if not over night. When your ready to fry it dip it in buttermilk that has a little hot sauce and worchestershire suace in it, then dredge in flour. Your chicken will have the flavor of all the many wonderful herbs and spices you used and this will permeate out to the breading. Mmmmmm delish!
Low-Fat Bisquick Oven Fried Chicken
Just buy one of those Shake and bake packages.
Growing up we always cut up the chicken into dark and white meat pieces. We put flour in a large paper sack and holding each piece of chicken over the bag we literally salted and peppered the chicken then dredged it in the flour. We added the chicken pieces to already hot oil in a cast iron skillet. My Mom would always fry the dark meat first as it would take longer. She would always taste a piece (usually a thigh) while she was cooking the rest just to make sure it was well cooked. Good luck.
