How do you freeze vegetables??

My attempts always end up as a soggy mess, when I try to cook them from frozen


Answers:
bring a pot of water to the boil and put veges in for a couple of minutes drain and add cold water to stop the cooking process drain pack and freeze

Blanch them in boiling water for a few minutes...seperate them on a baking tray and freeze them...when they are frozen you can put them in a bag and back in the freezer

put them in the freezer dumbass

there are some vegetables that are just not for freezing but i agree with nightowl's rec of blanching veg to preserve freshness then freeze in a tray before packaging in zip lock bags or vacuum seal containers

a flash freezer would help It litterly freezes to 50below almost instantly

i Just prepare as though i was cooking them, pop them into separate bags, label and date them and cook from frozen when required.... always taste fresh, but if you over cook, they will turn to soft mush..

peel and chop veggies then place in freezer bags raw and freeze. you can use them as and when you need them then.

I always prepare vegetables chop, dice,grate or slice before freezing and cook them straight from frozen by steaming,mine always turn out perfect. Sometimes its a tendency to overcook that makes them soggy cut your cooking time down slightly.

1. start with high quality and fresh vegetables , wash, and trim to your style of vegetable - sliced, diced , whole, etc.
2. Blanching is the key for vegetable shelf life and will help with color and texture. (blanching is the quick cooking at 212 in water or with steam for a minute to 5 minutes depending upon the vegetable.) Harmful enzymes will be deactivated during the cooking process.
3. Cooling quickly after the blanch step.
4. The speed of the freeze is also important but with only a home freezer which is set at 0 degrees F the best you can do is to cool the veggies very well and dry of the excess moisture and try to separate the units apart as much as possible.
5.Freeze overnight and then package with a good quality poly bag or better.
6. Keeping these frozen veggies at 0 degrees in your freezer with be almost as important than all the other factors above. Don't allow the door to be continually opening and closing- temperature changes within the freezer cabinet with shorten the shelf life considerably.
