What Can be done with Chili?

Hello,
I got two cans of Chili left (Chili Con Carne w/ Beans I guess would be "proper" name) and I'm wondering what can be done with it to make a bigger meal. My mom couldn't think of anything except to add onions and my Sister-in-law thought of the same thing I did, which is making chili dogs.

So after asking the two great cooks of my family I decided to come here. Does anyone have, at least, some ideas if not recipes? Or perhaps even know of a website/page about it?

Emeril's Beef Chili Cheese Fries:

2? hours 30 min prep
6-8 servings

2 tablespoons vegetable oil
2 cups chopped yellow onions
salt
cayenne
2 lbs ground beef
1 tablespoon chili powder
2 teaspoons ground cumin
crushed red pepper flakes
2 teaspoons dried oregano leaves
2 tablespoons chopped garlic
3 cups canned diced tomatoes
2 tablespoons tomato paste
3 cups beef broth
3-4 tablespoons masa harina flour
1 (1/2 lb) bag frozen french fries or waffle-shaped French fries
1/2 lb grated cheddar cheese
1/2 lb grated monterey jack cheese
1 cup sour cream
1/2 cup sliced pickled jalapeno peppers

1. Season onions with salt and cayenne and saute, stirring, until they begin to wilt, about 2 minutes.
2. Add the beef, chili powder, cumin, red pepper, and oregano, season with salt and cayenne, and cook until meat is done (no pink).
3. Add garlic, tomatoes, tomato paste and 2-1/2 cups beef stock, bring to boil and reduce heat to medium-low.
4. Simmer uncovered about 1 hour, stirring occasionally and skimming fat that rises to the surface.
5. Combine masa harina flour with remaining 1/2 cup stock.
6. Slowly add to the pot, stirring to blend, which will thicken the mixture.
7. Cook for 30 minutes and correct seasoning.
8. From here, Emeril deep fries his own shoestring French fries, but I use frozen French fries or waffle fries to save time (and mess!).
9. Prepare frozen potatoes as package directs.
10. Lower oven heat to 400 degrees F, place fries in bottom of a large glass rectangular baking dish.
11. Sprinkle cheeses over the fries and bake for 3 to 4 minutes.
12. Remove pan from oven and spoon hot chili over the top of the fries.
13. Garnish with sour cream and jalape?os and serve immediately.

CHILI OVER RICE

Frito pie - just get a bunch of fritos, top with warm chili and cheese (maybe some onion too if you like) yum!

You could also try mixing up some cornbread mix and pouring it over the chili then baking it

and as you thought, chili dogs are always good!

i add salsa, tuna, baked beans, and tomato sauce. taste amazing!!

You could add some corn and make it more like a soup. serve it over mashed potatoes , or rice. Or make some corn muffins and put it on top, kind of like a short cake.

Pour the Chili over Hot Dogs or use it as a Spaghetti Sauce.

eat it. ifypu have crackers and peanut butter, good everything goes with chili. If it is dead, add a little catsup and or onions. If I lived close by, I could show up with some beer. and chips.

mix with rice and corn and make burritos

serve with cornbread or rice

add some corn and cheese to it with those onions and top with sour cream and chives

put over baked potatoes with onions and cheese and or sour cream and chives

serve with peanut butter toast (don't ask me why but it's a great match)

on top of baked potatoes

dip fritos or cheesies into it

chili dogs are great, but you know that already

chili cheese fries, you make it like a poutine. French fries, top with cheese curd, cheddar cut into chucnks or grated and pour hot chili on top.

In a large glass pie dish layer 2 cups of corn chips, 1 cup of cheese (your choice) I like a combo of pepper-jack and Colby, 1/3 cup minced onions then spread one can of Chili, top with another cup of corn chips and pop into a 350* oven for 25 minutes. Sprinkle with 1/2 cup of cheese and back in the oven for 5-7 minutes to melt the cheese. Then serve with a salad and a root beer float. That is exactly what I served for dinner this evening. You have 2 cans of chili so double the recipe.
