Vacation recipes/ list for travel.?

Hi, My 3 kids 8 and under and Husband are going away for 2 weeks. We will only be driving 2.5 hrs to the Ocean .so I can make ahead and pack groceries. Where we are staying there are no real groceries close by so I want to avoid frequent trips out of town...Think Maine. I don't enjoy cooking but need items that I can make alot of ..we won't get sick of and also a bit nice for one or two meals..Think visits from inlaws. I think we have a grill...Basically we'll be at the beach most of the time and I don't want to stress about having to cook all the time. We'll have the 'dogs and cold cuts pbj's..You know I just don't want to get sick on kid food. Maybe some great pasta salad-y..Arrgghh. I don't know . Any suggestions would be great to get me motivated to plan and pack!

buy some thin sliced steaks and throw them on the grill. it won't take long to cook those. with that, you can make steak tacos. or you can buy ground chuck and grill some burgers and some brats. buy frozen boneless chicken breasts, too. bring a crockpot and a few cans of cream of mushroom soup and any kind of meat you like. put the meat and soup in there in the morning along with a few veggies and some water and seasonings and you've got a great meal if you cook it on low all day.

Canned foods. They are easy to pack and have a shelf life if you don't use them. Young kids like canned pasta and fruits. Buy premade burgers and use English muffins as the rolls as they double for breakfast if needed. Actually anything premade is easier and less time consuming such as marinated chicken or beef. Also the packaged flavored noodles or rice by Lipton are good and you just have to add water and/or milk. Fresh fruit such as apples and oranges as they last longer then grapes or bananas and you can toss them in the cooler for snacks at the beach. If you are going to buy groceries get them in NH on your way to Maine because there is no tax.
