Question:

Changing baking time and temperature?

My brownie recipe yields 24 servings with a temperature of 325 F for 40 minutes in a 9X13 inch pan. If I want to make more than 24 or half than 24 servings then how much time and temperature do I need to adjust. Also does time and temperature need to be adjusted if I use a different pan size?

I would appreciate if you can answer my questions.

For most recipes the baking temperature is the same, whether you make a single, double, or triple batch of anything. So if you double the recipe, two 9x13 pans of your brownies will still bake for 40 minutes, if you put them in the oven at the same time.

Changing the pan size is a bit tricky because you might end up with batter that is thicker or thinner than with what you would get in the original recipe. You could end up with crispy brownies or ones that are raw in the center.

Trial and error is the only way to go. If the batter is thinner, test for doneness (toothpick test) 5-10 minutes before the recommended time (30-35 minutes). If the batter in the pan is thicker, 5-10 minutes after (45-50 minutes).

In either situation, if the brownies are still under cooked, it is safer to leave them in the oven, but turn the oven off. The heat remaining will cook the brownies without burning them. Check after another 10 minutes for doneness.

it doesnt matter i think just as long as the temperature is the same and i wouldnt change the time either.
