Chicken & Tomato Rice

Ingredients:
1 1/2 lbs boneless chicken, cut into chunks
Salt
1 tablespoon chopped fresh ginger
1 tablespoon chopped garlic
3 tablespoons ghee or vegetable oil
2 bay leaves
2 green cardamom pods (about 12 seeds)
2 cloves
1 large onion, chopped
1 tablespoon red chili powder or red pepper flakes
3/4 cup rice
3/4 cup tomato sauce or tomato puree
3/4 cup water

Steps:
1. Rub the chicken with salt, half the ginger, the garlic and 1 tablespoon of the ghee; set aside.

2. Heat the remaining oil in a large saucepan or Dutch oven. Add the bay leaves, cardamom and cloves and sizzle for a few seconds. Add the chicken and brown all over. Add the onion and stir-fry for 2 to 3 minutes. Add the remaining ginger, chili powder and rice, stirring gently. Add the salt, tomato sauce and water and mix well.

3. Bring to a boil, reduce heat to low or simmer, and cover the pan. Cook for 10 to 12 minutes, or until rice is tender. Remove the lid, fluff the rice with a fork and let stand 5 minutes.

It's nothing fancy, but my family always enjoyed this. I just put about a quarter of an inch of water in a deep fry pan and boiled skinless chicken breasts with salt until it whitened. Then I added onions, carrots, celery and Hunt's sauce. Cover and let simmer until veggies are tender. Serve over rice ( I use the boil in bag type).
It's an easy dish and very kid friendly.

Chargrilled Chicken with Rice and Tomato & Basil Salad


1 chicken breast
1-2 tsp olive oil
salt and freshly ground black pepper
1 lemon, zest and juice only
55-85g/2-3oz rice
water, for cooking
salt, to taste
butter, for greasing

Tomato and Basil Salad

handful of basil leaves, torn
small handful of coriander leaves, chopped
salt and freshly ground black pepper
1-2 tbsp olive oil
1/2 lemon, juice only
1 tomato diced

Herb Oil

2 handfuls of fresh herbs, including parsley, coriander, basil and dill
4 tbsp olive oil



1. Rub the chicken breast with the olive oil and salt and pepper to taste, and the lemon zest and juice.

2. Heat a griddle pan over a fairly high flame. Place the chicken on to it, and chargrill for 4-5 minutes on each side, or until cooked.

3. Cook the rice as per packet instructions in plenty of salted, boiling water.

4. Grease a dish, and place the cooked rice in it. Turn out onto a plate to serve.

5. For the tomato and basil salad, mix all the salad ingredients together in a bowl, then place a large pile onto the plate next to the rice.

6. For the herb oil, place all the herb oil ingredients into a mini food processor, and blend until smooth. Drizzle the herb oil on top of the chicken, rice and salad, to serve.

HI...you just need a few more ingredients to make a great dish!
Here it goes
Celery, onions, okra, garlic, green peppers, parsley
If you can get these together you will love it I'm promising ya..

Place oil in a deep cooking pan..just enough to cover the bottom......like canola oil or olive oil...
place your favorite chicken parts in there and brown well on all sides remove to a plate..then place in the same pot all the veggies mentioned...start with chopped celery, onion, garlic and add the green peppers ...chop fine and cook on medium heat...until soft.. take about 3 tablespoons of all purpose flour and sprinkle over this mixture....stir well until flour has lost it's white color....now add slowly the liquid about a quart of chicken stock or water or half water and half stock. Stir well until it starts to thicken....now add the frozen okra...i get the sliced ones...and 1 cup of rice...1 can of stewed tomatoes and 1/2 small can of tomato paste.....here are the spices that are great in this dish. Salt, black and red pepper to taste...dried basil 2 bay leaves and last. 2 tablespoons of Worstershire sauce.
NOTE season the chicken before you brown it...Mix all this together and put the lid on it and let simmer for 45 minutes to an hour...until everything is tender and serve with toasted French bread...I never measure spices just put in what I think is right for the amount....you can also add a dash of hot sauce to this if you like.

VERY SIMPLE:

De-boned Chicken 4 or 6 (skinless normally but with skin is fine too) & Two cans of chopped tomato.

Season chicken with Worcester sauce, salt and pepper.
Put the chicken and Chopped tomatoes mxed up all together in a baking dish. You can add some Olive oil if you like, and bake for 45 minutes at 200 degrees

Make your Rice (microwave, steam or boil)
Add paprika, salt and pepper to the rice whilst boiling it.

Dish the two together... Very nice indeed :)

Chicken Tomatoe Pesto Risotto

Cook a whole chicken breast by your preferred method.
Bake, Fry, Boil etc. & cut into pieces. (Add later)
You can steam some fresh vegies if you wish.

heat 1 TBSp Oil in deep pan, pour in 1 1/2 cups ARBORIO rice or any other short grain rice. Cook 5 mins, making sure all rice is covered in oil.

Pour in about 1/2 cup - 3/4 cup white wine (dry). Simmer off for 5 mins.

Add one tin of crushed tomatoes OR chop about 5 fresh tomatoes & cooked them off to soften prior to adding here.

Pour in Chicken Stock (packet or make your own from the chicken you use in the recipe?) about 1/2 a cup at a time, cooking down as you go, cook until all chicken stock is absorbed & rice is cooked. You may use up to two-four cups of stock. REMEMBER - Add stock 1/2 cup at a time. stirring after each addition.

While this is simmering away, add about 2 Tsp of SunDried Tomatoe Pesto & 1Tsp of Basil Pesto. Stir Through.
Seson to taste, Salt pepper, other herbs/spices to suit yourself.

Add your cooked chicken & any veggies you may have steamed prior to this stage.

Add a dash of cream about 2 mins before serving, you can add more to your liking.
Sprinkle a handfuill of parmesan cheese (grated/shaved) & stir through.
Add a handfull of fresh basil leaves or baby spinach for greeenery :)

I serve this up about once a week for my whole family. You can change it to suit any diet etc. I use whatever is left over, pre cooked veggies etc from the fridge.

You could use baked pumpkin or sweet potatoe as an alternative to chicken.

Also suggest adding mushrooms, cut out the tomatoes / add more stock as you need it. Cut out tomatoe pesto but add more basil pesto & more cream. and peas? Yummy!
