What is the name of the pastry made to make pies?
Answers:
if it's a pork pie it's hot water crust pastry
if it's for sausage rolls then puff pastry or shortcrust (i prefer puff)
if it's for a sweet pie I'd use sweet shortcrust pastry
if it's for a steak pie I'd use puff pastry
Shortcrust pastry is probably what you are thinking of. Of course you can just fill a dish with filling and top it with puff pastry and it could still be called a pie.

There are different types of crusts for pies....
The basic one you use for fruit pies and meat pies is a basic recipe: I just call it "Pie crust"
here is the one from the famous Julia Child:
5 1/4 cups pastry flour or all purpose flour
1 tablespoon kosher salt
1 1/2 sticks cold unsalted butter cut into pieces
1 3/4 solid vegetable shortening chilled
1 cup ice water
In a large bowl ...mix the flour and salt very well together.
Now add the butter and shortening..and mix well with your clean fingers into pieces that look like small peas....
Then add the ice water slowly...and mix with a fork...until well combined..now on a floured counter....mix the dough a few times until it has no flour showing and is soft and together but don't over work it...now wrap in plastic and chill for 2 hours...then after it's chilled you are ready to roll it out for any pie filling....this recipe can be cut into 4 pieces before chilling this will make 4 crusts...
There are other crusts too...for some creamy pies like fruit cheesecake pies....they call for graham cracker crumbs, sugar and melted butter..they are very tasty...you mix these ingredients together and then bake for a few minutes until set....
Also some recipes call for other cookie crumbs vanilla wafers, chocolate wafers..or gingersnaps ...depending on what filling goes inside...I hope this helps....if I can help you more just write anytime...to italmama6060@yahoo.com
