I'm looking for the authentic recipe for the Frankfurt (Germany) speciality - it's a fresh, seasonal, slightly astringent herb sauce as the name suggests.

Hi, this is one of the recipes for the "Grüne Sauce":
you need the herbs: parsley, chives, chervis, sorrel, dill, borage, watercress, tarragon, lovace, melissa. 2 onions, 4 hard boiled eggs, 1 tbl spoon ov vinegar( I prefer lemon juice), 2 ttblspoons oil, 1/4 l sour cream, 150gr yogurt, a knifetip of sugar, salt + pepper.
For the right taste, see to have not too much of the strong tasting herbs, needs a bit of trying.Rinse the herbs thoroughly, mince them in the mixer with the other ingredients, or mince them with a big knife. mince the onions or cut them in to tiniest dices. mix all together in a bowl and give it the final taste after one hour in the fridge.
for a genuine Frankfurter Gruene Sosse u need at least 7 of the herbs. and theres many variations possible how to make the sauce. It goes well with boiled "beefbreast" (dont know transl.) fish, and whole potatoes or homefries.
