Veal stock?????
I'm completely ignorant on the the subject so lets make the explainations as simple and complete as possible.
What is it?
How is it made?
Or Where can I buy it?
Answers:
Veal stock is the 'same as' beef stock, except it's made from 'veal' (baby cattle) rather than from beef ... and I think that if you really want to make some, you'll have to buy some 'veal bones' wih a bit of meat on them (veal is EXTREMELY EXPENSIVE in comparison to beef) ... put about 'half a pot' of these bones that have been 'covered' with water on the stove, bring it to a 'boil' and turn it down to 'simmer' covered on the 'back' of your stove. Some people add a 'vegetable mix' (celery, carrots, and onions, in a 'gauze bag') to make it 'taste better' but I don't like any 'vegies' in my 'meat stock' ... you may also add 'some salt' but if you do, don't add as much salt as you want to make it 'taste good' because you'll be adding 'more salt' when you are using your 'stock' in recipes ...
But I really wouldn't make 'veal stock' unless I was a 'professional chef' and was making a very 'delicate' flavored veal dish for a restaurant ... most people just add a 'thinned beef stock' to the recipes that call for 'veal stock' and they taste just as good, if not better.

I'm married to an 'ex' professional chef, and he does all of our cooking... and I really HATE veal, so it was 'fun' to tell you how to make the stock ... because I don't need to think all that much about what you are 'serving' that called for it. My 'hatred' is my 'personal thing' and you should 'taste it' yourself and make your own decision.
well simply....if you are doing it at home....you need to roast off veal bones...paint them with tomato puree and roast until a nice caramelization occurs.....pull them out....put in a stock pot...or whatever large pot you have...add celery, carrots, and onions (no need to cut very small) add water to fill the pot....and add peppercorns, garlic, thyme, and parsley stems....let it simmer (not boil) for a while....like at least 6 hours....and do not stir it....it will get bitter........as for where to buy it...i dont know...i have been looking but have yet to find it....hope this helps
Stock is made by boiling your meat or bones from the meat.
You make it by boiling the meat(bones) along with onion,celary and carrots together till you get a good rich broth.Discard the meat and veg after it's finished.I usuallly let mine simmer away at a slow boil for several hours.
You can buy chicken stock and beef stock but I have never saw veal stock in the stores.You find it in the soup section.
(When you add the veg to the meat and water,you can leave them in big chunks.)
I have never roasted the bones first and it turns out fine.
