CROCKPOT QUESO

1 (2 lb) block Velveeta Cheese
2 cloves garlic, minced
1-2 tablespoons jalapeno peppers, finely chopped
1 can chili without beans
1/4 teaspoon ground cumin

Combine all ingredients in Crockpot and heat for several hours. Serve with warm corn chips and fresh salsa.

Melt Velveeta Cheese and Ro-Tel tomato sauce in a pot. Depending on how much you want to make and how hot you want it, adjust the quantatity that you add. The cook should always sample their own dish numerous times to check for taste and consistency (not intended to be a guide in restraunts or for a set recipe).

Do you mean cheese in general, or just mexican cheese?? You can make a very simple mexican cheese called queso blanco (white cheese) with
1 gal whole milk
1/4 c cider vinegar
1 T salt

You need to heat the milk to 185 degrees, add salt and vinegar. (Don't forget to keep stirring or you will scorch the milk.) Then the cheese (or curd as it now is) needs to be drained for at least 3 hours in a collander lined with cheesecloth (a towel will work too.) Remeber to keep this mix in the fridge while it is draing.

or...
u could buy queso blanco and melt it.

1 pkg ground beef
2 cups salsa
16 oz velvetta cheese (or mexican cheese...which ever you prefer)

Brown the beef until no pink is left. Drain and place into microwaveable bowl. Add salsa and mix well. Cut cheese into smaller than bite size cubes. Mix with meat mix. Put into microwave at 2 minute intervals until melted. Mix completly place back into microwave for 1 minute and serve warm with tortilla chips or your favorite veggies.
