I need a simple recipe for homemade white bread.?
the recipe i use to use does NOT contain dry milk.
Answers:
500g strong flour
300g water
8g salt
8g yeast
Rough US measures would be:
4 cups bread flour (*)
1-1/4 cups water
2 tsp salt
2 tsp yeast
* Note: assuming you use the spoon and flatten technique; if you scoop straight out of the bag, you will only need ~3-1/4 cups flour)
This is a very basic "french" bread recipe. If you are looking for a soft American "sandwich" loaf, set the machine to "sandwich" mode (if your machine does not have that mode, use either "sweet" or "basic" mode). If you want a loaf of "french" bread, use your machine's "french" setting, or even better, make baguettes and bake them in the oven.
If you do not have a bread machine, I recommend 2 rises prior to shaping. Baguettes (3) may be fired at 500°F for ~10 minutes (watch them closely!), or 450°F for 15 (still watch them closely!) Larger loaves should be baked at 350°F to 400°F for 20-40 minutes, depending on the shape of the loaf.

INGREDIENTS
1 cup warm water (110 degrees F/45 degrees C)
3 tablespoons white sugar
1 1/2 teaspoons salt
3 tablespoons vegetable oil
3 cups bread flour
2 1/4 teaspoons active dry yeast
DIRECTIONS
Place water, sugar, salt, oil, bread flour and yeast into pan of bread machine.
Bake on White Bread setting . Cool on wire racks before slicing.

1 1/4 cups lukewarm milk
3 cups all-purpose flour
1 1/2 tablespoons white sugar
1 1/2 teaspoons salt
2 tablespoons butter
2 teaspoons active dry yeast
DIRECTIONS
Place ingredients in the pan of the bread machine in the order suggested by the manufacturer.
Select Basic or White Bread setting, and press Start. When done, place on wire rack for at least 10 minutes before slicing.

INGREDIENTS
1/2 cup warm water
3 (.25 ounce) packages active dry yeast
1/4 cup bread flour
1 tablespoon white sugar
2 cups quick cooking oats
2 cups whole wheat flour
4 1/2 cups warm water
1 1/2 tablespoons salt
2/3 cup brown sugar
2/3 cup vegetable oil
10 cups bread flour
DIRECTIONS
In the mixing bowl of an electric mixer, stir together 1/2 cup warm water, 1 tablespoon sugar, 1/4 cup bread flour, and yeast. Let grow for about 5 minutes. It will bubble almost immediately.
Measure oats, 4 1/2 cups warm water, whole wheat flour, salt, 2/3 cup sugar, and 2/3 cup oil into the mixing bowl. Mix on low speed with a dough hook for 1 to 2 minutes. Increase speed slightly, and begin adding bread flour 1/2 to 1 cup at a time until dough pulls away from sides of bowl. Humidity determines how much flour you need before the bread pulls away from the edge of the bowl. It is normal for the dough to be sticky.
Place dough in an oiled bowl, and turn to coat the surface. Cover with a damp cloth. Let rise in a warm spot for 1 hour, or until doubled in size.
Divide dough into 6 pieces. Shape loaves, and place in greased 8 x 4 inch pans. Let rise until dough is 1 inch above rim of pans, usually 1 hour.
Bake at 350 degrees F ( 175 degrees C) for 35 minutes, or until tops are browned. Let cool in pans for 10 minutes, and then turn out onto wire racks to cool completely.

PERFECT RICH WHITE BREAD
4 1/4 cups bread flour
1 tablespoon vital wheat gluten (optional)
4 tablespoons unsalted butter, softened
3 tablespoons lard
1/2 cup milk, scalded
1 cup water
2 teaspoons active dry yeast
1 1/4 teaspoons salt
1 egg yolk
3 1/2 tablespoons sugar or honey
This is a good sized loaf for the larger bread machines, but can also be made conventionally.
If you want your bread to rise higher and be lighter, scald the milk. Yes, it does make a difference. There is a protein in milk which also exists in non-fat dry milk solids, that has been proven to retard yeast development. Scalding and skimming the milk removes some of this protein, making for a lighter bread product.
Note: That having been said, you may opt to skip the scalding process if you're in a hurry, and you will still have a flavorful loaf of bread, albeit a somewhat heavier one than if you had taken the extra step.
In a small saucepan, bring milk nearly to a boil, (little bubbles will begin to form around the edges of pan). Remove immediately from heat and allow to sit without stirring or moving for about 20 minutes. A film will form on the surface of the milk. Skim this protein layer off carefully with an upside-down spoon, removing as much as possible.
Add butter, lard, salt, and allow to cool to lukewarm before adding to remaining ingredients in bread machine. This makes a 2 lb. loaf for bread machines like the Zojirushi.
This makes a rich, tasty white bread with a nice crust that keeps well.
Bake at medium crust setting.
