HOT MILK SPONGE CAKE
2 cups all-purpose flour
2 cups white sugar
4 eggs
1 cup milk
2 teaspoons baking powder
2 teaspoons vanilla extract
Preheat oven to 350 degrees. Sift together flour and baking powder. Heat milk in a small saucepan until just boiling, then remove from heat and set aside.
Beat eggs until foamy, then add sugar. Continue beating on medium-high speed until thick and lemon colored. Add vanilla, reduce mixer speed to medium and add hot milk in a steady stream. Quickly beat in flour mixture.
Pour into a 10 inch tube pan. Bake in preheated oven 45 minutes, or until top springs back when lightly tapped.

4oz margarine/butter

if you want it to be bigger you always have twice as much flour, sugar and marge to eggs...
preheat oven to 180... and cook for about 20mins, otherwise until golden brown...
3 eggs 200 flour 150 of sugar and buter/marg 1tea spoon of vanilla extract and any other filling you want choc chips razens fruit and nuts

For small sponge cake (6ins) weigh 2 eggs then same weight each of butter, flour, sugar (castor). Switch oven on. Gas mark 6.
1/ beat together butter & sugar until light & fluffy
2/ beat eggs then add a bit at a time & beat well
3/ fold in flour with metal spoon (do not beat) until all incorporated
4/ spoon into lined/greased cake tin & bake in centre of oven until brown (approx 20 mins) & when centre pressed with finger it springs back immediately.
5/ turn out onto cooling rack & allow to cool completely before spreading with jam & cream.
Remember, you can double ingredients for bigger cakes or to layer into gateax. Use more than one cake tin for layered cakes.
