BANANA BREAD

2 1/2 cups white or white whole wheat flour
1 teaspoon baking soda
1 teaspoon salt
1 cup vegetable shortening
2 cups sugar
2 cups over-ripe mashed bananas
4 eggs, beaten
1 cup chopped nuts
1 tablespoon banana liqueur or dark rum


Preheat oven to 350F.
Combine flour, baking soda and salt; stir to mix well.

In the bowl of an electric mixer, beat together shortening, sugar, mashed bananas, and eggs. When well beaten, gradually add the flour mixture while mixture is at lowest speed. Mix only until combined.

Stir in the banana liqueur or rum and the chopped walnuts, pecans, hazelnuts or macadamia nuts.

Butter and flour a loaf pan. Bake for 65-70 minutes or until cake tests done (toothpick inserted in center comes out clean).

Remove from oven and allow to sit for several minutes. Run a bread knife around edges of loaf pan to free it from sides and remove from pan. Rub the top of the still-warm loaf with a pat of butter to soften and glaze the top, if desired.

Serve with whipped cream cheese spread on each slice.


VERY BANANA BREAD

1/2 cup butter, room temperature
1 1/3 cup sugar
2 eggs
2 tsp. Myer's rum banana liquor
1/4 cup banana yogurt (Banilla) or buttermilk
1 tsp. banana, almond or vanilla extract
2 cups flour, sifted
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 cup ripe bananas, mashed
1 1/2 cup chopped pecans or walnuts

In the bowl of an electric mixer, cream together butter and sugar until it becomes light and fluffy. Add eggs, one at a time, beating after each addition. Continue to beat until fluffy and light.
Combine liquor and extracts. Sift the dry ingredients together and add half to batter. Add buttermilk or yogurt, extract and liquor, then remaining dry ingredients. Add mashed bananas and beat one minute longer.

Stir in chopped nuts.

Grease and flour several loaf pans.

Bake at 350F degrees until toothpick inserted in center comes out clean.

I have a very good, very simple one that I make all the time.

2 really ripe bananas
2 eggs
1 tsp vanilla
1 tsp cinnamon
1 cup sugar (use white or a combination of white/brown)
2 cups Bisquick

Mash the bananas. Beat in the eggs, vanilla and cinnamon. Mix in the sugar until everything is well-combined. Stir in the Bisquick. Pour the batter into a greased loaf pan and bake at 350oF for an hour or until done (do the toothpick test).

Simple Banana Bread
Ingredients
1 1/2 cups Flour
1 cup Sugar
1 tsp. Salt
1 tsp. Baking soda
1/4 cup Butter (melted)

3 Ripe bananas (med. size)
1/2 cup Chocolate chips
Optional ingredients: raisins, currants, dried cherries, nuts etc. can be used in addition to the chocolate chips or in place of them.

Preparation
Preheat oven to 325°F.

Spray 9" loaf pan with baking spray.

Melt cold butter for 30 seconds in microwave (less time if room temp), set aside. Combine dry ingredients in a bowl and mix together. Slice ripe bananas (chop with knife if not ripe enough to mush). Add bananas, butter, and egg to flour mixture. Stir with a wooden spoon until dry ingredients are moistened. Add chocolate chips and/or optional ingredients, stir to mix. Pour into loaf pan and bake for 1 hour.

Recipe can be doubled.

Banana Bread Muffins

1 cup white sugar
1 egg
2 cups all-purpose flour
1/2 teaspoon salt
1/2 cup vegetable oil
3 ripe bananas, mashed
1/4 cup chopped walnuts
1 teaspoon baking soda

Preheat oven to 350 degrees F (175 degrees C). Place muffin cups in muffin tin, or grease with a little butter.
Mix sugar, oil, and egg until creamy and light yellow. Add bananas and walnuts. Add flour, baking soda, and salt. Stir until completely smooth. Spoon the batter into the muffin tin.
Bake for 30 to 40 minutes, until toothpick poked in center muffin comes out clean.

Last winter I made some using a Duncan Heinz spice cake mix. I just followed the directions except added 2 mashed ripe bananas and only put a quarter of the oil needed. Also added some chopped pecans to the batter. Came out tasting super good, just slightly more cake like than bread. Next time I'll use muffin tins instead.

I got this recipe from an on-line recipe exchange and have made it several times. You can vary the type of cake mix - and chocolate is absolutely delicious!

1 stick butter, softened
1 cup sugar
2 cups all purpose flour
1 tsp. salt
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. cinnamon
2 eggs
3 bananas, mashed
1/3 cup buttermilk
1 tsp. vanilla
1/2 cup chopped nuts

Preheat oven to 350 degrees. Grease and flour a loaf pan. Cream butter and sugar together. Add in smashed bananas, eggs and vanilla. Sift flour, salt, baking powder, cinnamon and baking soda together. Add in flour mixture alternately with buttermilk. Add in chopped nuts. Pour into loaf pan and bake for 45-55 minutes depending on your oven. Check the bread with a toothpick inserted. It's done when a tooth pick comes out clean.
