CHICKEN - VEGETABLE LUAU

3 tbsp. soy sauce
1/2 tsp. sugar
1 (2 lb.) chicken, cut up
1 tsp. instant chicken bouillon or 1 chicken bouillon cube
1 c. boiling water
1 tbsp. vegetable oil
1 clove garlic, minced
1/8 tsp. ground ginger
8 slices canned pineapple, drained & cut into pieces
1 green pepper, coarsely chopped
2 carrots, rolled a quarter-turn then sliced
1 (6 oz.) can sliced bamboo shoots, drained
1 green onion with top, sliced
1 tbsp. brown sugar
1 tbsp. cornstarch
3 tbsp. cold water

1. In a small mixing bowl, combine soy sauce and sugar. Brush over chicken and marinate for at least 20 minutes. In another small mixing bowl, dissolve bouillon in water.
2. Pour oil into wok. Preheat, uncovered, for 2 minutes at medium-high. Add chicken, 1 or 2 pieces at a time and brown. As chicken browns, push up the side and add next piece. Reduce heat to medium-low; add chicken broth, garlic and ginger. Bring to a boil. Cover and simmer for 30 minutes at medium-low.

3. Add pineapple, green pepper, carrots, bamboo shoots and onion. Continue cooking covered about 20 minutes or until chicken is tender.

4. In a small mixing bowl, dissolve brown sugar and cornstarch in water. Add to wok and bring mixture to a boil. Reduce heat to low for serving. Serve sauce over chicken with steamed rice. Makes 4 servings.

Hint: May substitute 1/2 cup pineapple chunks or 1/2 cup crushed pineapple

HAWAIIAN LUAU CAKE

3 c. flour
2 c. sugar
1 tsp. salt
1 tsp. soda
1 tsp. cinnamon
1 1/2 c. oil
3 eggs, beaten
1 (8 oz.) can crushed pineapple, drained
1 1/2 tsp. vanilla
1 c. chopped nuts
2 c. diced bananas

Sift dry ingredients; add remaining until blended. Bake in greased tube pan, 350 degrees for 1 hour, 20 minutes. Place foil over top for last 15 to 20 minutes to prevent cracking.

LUAU BAKED BEANS

4 c. canned pork and beans
1 1/4 c. crushed pineapple
3/4 c. chili sauce
1/4 c. molasses
1/2 c. onions, chopped
1/4 lb. bacon, diced
2 tbsp. prepared mustard

Fry bacon and remove from pan. Lightly fry onions. Mix all ingredients in baking dish and crumble bacon on top. Cover and bake for 45 minutes in 350 degree oven. Uncover for last 30 minutes of baking.

Shrimp and chicken

Kalua Pork

Ingredients:

3 lb pork butt
2 cups water
1 teaspoon liquid smoke
1/4 cup Hawaiian Salt (or rock salt)

Procedure
Place pork fat side up in a roasting pan or deep casserole dish. Combine water and liquid smoke; pour over meat. Sprinkle with salt. Cover and roast in oven at 400 degrees F. for three hours. Remove from pan and shred. Makes six servings.

I use usally make a salad to go with this. I use macadamia nuts in it. It really helps tie in the flavors.

Chicken Luau

2 pounds chicken breasts
2 tablespoons macadamia nut oil
2 teaspoons minced garlic
4 cups chicken stock
3 boxes (10 oz. each) frozen whole leaf spinach, thawed.
1 1/2 cups coconut milk

Remove skin and bones from chicken breasts; reserve for stock if desired. Cut chicken into 1-inch cubes. Heat oil in a large skillet and saute chicken and garlic until light brown. Add stock, cover, and simmer 10 minutes or until chicken is tender. Drain spinach and stir spinach and coconut milk into skillet. Simmer for 5 minutes. Makes 8 servings.

Oven Kalua Pig
Traditionally cooked in pit with lava rocks Kalua Pig is the cornerstone of many Hawaiian celebrations. This recipe will allow you to create this delicacy without digging up the yard.

Ingredients:
1 medium large pork butt (around 8 lbs.)
? Cup Hawaii salt or Kosher Salt
2 Cups water
1-Tablespoon Liquid Smoke

Directions:
Cut a few half-inch incisions into the pork. Place pork butt in large roasting pan. Rub in salt and liquid smoke. Pour water into pan. Roast in the oven at 200 degrees Fahrenheit for over 8 hours. Kalua pork is usually shredded and may be served with poi or rice.


Huli Huli Chicken
Hawaiian barbequed chicken is an island favorite. In the Hawaiian language “huli” means “turn over” or “flip,” which is precisely how Huli Huli Chicken is cooked. The outstanding feature of Huli Huli Chicken is the sauce.

Ingredients:
3 Fryers split or quartered
? Cup Soy Sauce
? Ketchup
? Cup Pineapple juice concentrate
? Cup Chicken broth
1/3 Cup White Wine
1 Teaspoon Worcestershire Sauce
1 Pinch Ginger

Directions:
Combine soy sauce, ketchup, pineapple juice concentrate, chicken broth, white wine, Worcestershire sauce, and ginger in a large bowl. You may marinate your chicken pieces in the sauce or brush on and barbeque immediately. Grill the chicken turning and basting with the sauce until fully cooked.


Lomi Lomi Salmon
Lomi Lomi in the Hawaiian language means “massage,” which refers to the way the ingredients are combined or massaged to create a wonderful cold salad.

Ingredients:
1 Pound salt salmon
4 Tomatoes peeled and diced
1 Medium Maui Onion chopped (mild white onion)
Green Onions for garnish

Directions:
Soak the Salt Salmon in water to help remove the skin and excess salt (If you cannot find salt salmon you may substitute canned salmon and rub in a small amount of Hawaiian Salt or Kosher Salt). Shred the Salmon with your hands. Combine shredded salmon, onions and tomatoes in large bowl and massage until thoroughly mixed. At this point you may choose to add some crushed ice to aid in chilling. Serve chilled.


Haupia
Hawaiian coconut pudding is a wonderfully easy and delicious dessert.

Ingredients:
12 Oz. can Coconut Milk
5 Tablespoons Sugar
5 Tablespoon Cornstarch
? Cup Water

Directions:
Combine ingredients into a saucepan. Stir well until all are completely mixed. Bring mixture to a boil then simmer over low heat until mixture thickens, stirring constantly. Pour thickened mixture into 8 inch square pan. Refrigerate until firm. Cut into squares and serve.

Poi

Taro root, peeled and steamed
Water

Mash the taro with a stone pestle, or "poi pounder". Add water until the poi is smooth and sticky.

Hawaiian-Style Poke

1 pound Ahi tuna, cut into 1-inch dice
1/2 cup chopped limu kohu (red seaweed)
1 teaspoon inamona (roasted, crushed kukui nut), optional but very traditional, recipe follows
1/2 cup aloha shoyu (soy sauce)
1 Maui onion, diced

Mix all ingredients and chill for 1 hour.

Inamona:
1 cup whole kukui nuts

Roast nuts whole over a grill or in a 325 degree F oven until golden brown for 90 minutes. Crack 1 kukui nut, and if it is a dark brown color, they are ready. Cool nuts, scrape out the nutmeat, and chop finely. Add Hawaiian salt, to taste

Lomi Lomi Salmon

1 pound salt salmon, shredded
4 pounds ripe tomatoes, small dice
3/4 pound Maui onion, finely diced
5 ounces scallions, whites and greens, coarsely chopped

Mix all ingredients together by hand ('lomi lomi' means "to massage" in Hawaiian). Let cool in refrigerator.

Lava Flow

1 ounces light rum
2 ounces pineapple juice
6 ounces pina colada mix (coconut cream and pineapple juice)
1 ounce strawberry puree
1 small chunk pineapple, for garnish

Blend rum, pineapple juice, and pina colada mix with 1 cup of ice. Next, take a glass and coat the inside with strawberry puree. Pour in colada blend. Finally, use a spoon to drag the strawberry puree up through the colada drink, creating a pink stripe. Garnish with a pineapple chunk, and serve.

Make a fruit basket. Take a watermelon and cute it into a basket shape, dig out the insides and cut up many types of fruit and throw them in. Burgers and dogs are always a good option and maybe pick up an icee maker from like WalMart. Have fun!
