What to make for dinner?

Ok I am totally bored. After 30 years of prep and cooking serving and cleaning up. I have no omph left in me. Nothing is appealing to me to prep and serve. I can not dine out every night. Husband is picky. Any suggestion? Food Blues in Chicago

Open face Chicken Cordon Bleu:

Slice chicken breasts in half lengthwise so each makes two flat pieces, top with a slice of deli ham and a slice of swiss, sprinkle each lightly with itallian bread crumbs. Bake at 400* until the chicken is cooked! YUM!! Great with a simple salad.

Bonless fried chicken, mashed potatos, green beans, milk gravy you can't go wrong there.

have some pasta with breadsticks and mushrooms and vegetables and all. then have some fresh peaches and vanilla ice cream :D mmmm

Ever watched rachel rays 30 min cooking show? She shows you how to prepare foods in 30 mins and she has lots of good ideas! She is on the food Network channel in the Mid afternoon early evening. I have gotten a few ideas from her. One thing I made personally recently is a tortilla hamburger. My bf LOVES hamburgers but I get bored with them so i always do wierd stuff to mine to spice it up. I cooked the hamburger and sauted some green onions and green pepper. I buttered the outside of a soft tortilla sprinkled some salt pepper and garlic on it, put it in a hot pan sprinkled some cheese and and the green peppers and onions on it then put the hamburger on, then put a slice of regular cheese on top of the meat..then put another tortilla on top lightly buttered the outside agian and sprinkled more garlic powder salt and pepper...flipped it over making sure both sides got nice and toasty brown. Once its done I cut it in quarters and served ate it with a side of ranch and salsa. It was my cheeseburger quesadilla! Not bad for something different to a regular meal at my house.

Braised Lamb Shanks.
Mashed Potatoes, Minted Peas and Mint sauce or gravy served hot and poured over the tatties and lamb.
