Cowboy Steak

Rub:
1 1/2 teaspoons ancho chili powder, or other chili powder
1 1/2 teaspoons fine ground espresso coffee
1/2 teaspoon brown sugar
1/4 teaspoon dry mustard
1/4 teaspoon ground coriander
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper

1 1/4 pound shoulder center steak (Ranch Steak), or top sirloin, about 1 1/4-inch thick

Spray a large nonstick skillet with cooking spray and preheat it over medium-high heat. In a small bowl combine all the ingredients for the rub and coat the steak well on both sides.

Cook steak for 14 minutes, turning once, for medium to medium-rare. Allow steak to sit for 5 minutes before slicing.

Salmon Croquettes.
3 Large peeled potatoes, chopped.
1 Small onion finely chopped.
2 210 g of Pink salmon, drained and flaked.
1 T Chopped fresh parsley.
2 t Grated Lemon Zest.
? C lemon juice.
1 T Vinegar.
1 Egg, lightly beaten.
? C Plain Flour.
S&P.
2 Eggs lightly beaten.
11/2 C Fresh Bread Crumbs.
Oil

Cook potatoes in boiling water until just tender.
Drain and mash.
Place in a mixing bowl. Add onion, salmon, parsley, lemon zest and juice, vinegar, one whisked egg and pepper.
Stir to combine.

Divide mixture into 16 portions and form into patties or sausage shape.
(III)
Combine flour and pepper and roll the patties or croquettes to cover. Shake off excess flour and dip in the two beaten eggs, then into the crumbs to coat evenly. Store in the refrigerator for 3 hours.
(IV)
Heat oil in a deep fry pan and lower a few at a time into medium hot oil for about 5 minutes turning over.
Remove and drain on paper towels and keep warm.

At the end of step three they can be refrigerated for up to a couple of days.

If your dad like's mushrooms and meat, try this recipe. It's a major hit around here at any time. If he doesn't like mushrooms, try the pinapple drumsticks below. This is a great way to make enough for everyone and you can all sit around and laugh and talk and actually spend time with your dad instead of just taking him out to dinner and leaving. Make a whole day of it. I got a receipe for some awsome mini cheesecakes as well if you want that too for dessert. The nice thing is that all these things take no effort and allow more time with family.

Beef and Mushrooms over Pasta

Let the crockpot do the work while you are away for the day.
Ingredients

1 lb. stew meat
1 can cream of mushroom soup, undiluted
1 envelope of dry onion soup mix
2 C. fresh mushrooms, sliced
1/4 tsp. pepper
Hot cooked pasta

Directions

Lightly brown stew meat in a pan. Then combine stew meat, soup, soup mix, mushrooms and pepper in crockpot. Cover and cook for 8 to 10 hours on low. Serve over pasta.
Yield: 4 servings


Honey-Pineapple Chicken Drumettes

Instead of hot and spicy add some honey to make the wings a sweet taste.

Ingredients
3 lb. chicken drumettes (or just a pack of mixed legs and thighs is what I did)
1 TBSP Garlic (crushed from a jar works)
1 Can pineapple or a whole fresh cut up
1/2 tsp. salt
1/2 tsp. ground black pepper
1 Cup. honey
1/2 Cup. soy sauce
2 TBSP. vegetable oil

Directions
Rinse and drain chicken. Add garlic and cut pineapple into 1 inch cubes. Combine the salt, pepper, honey, soy sauce, pineapple, vegetable oil and garlic in a bowl and mix well. Place drumettes in slow cooker/crock pot and pour sauce over the wings. Cook covered on low setting for 6 to 7 hours.

Fire up a nice BBQ (steak, chops, chicken, whatever) with patatoes and grilled vegetables like zucchni and portobello mushrooms. Serve some nice wine or his fav beer.

I made this the other day for friends, and it's pretty easy to make. Maybe your Dad might like it?
''Fettuccine Alfredo With Peas and Ham'' (Prep time: 3 minutes and cooking time: 8 minutes)

9 oz fresh fettuccine
1 tablespoon butter
1/2 cup chopped onion
1and 1/2 cups frozen peas, thawed
4 oz cooked ham steak, cut into strips or cubes
1 cup prepared low-fat Alfredo sauce
Salt and pepper to taste

Cook fettuccine according to package instructions. Reserve 1/4 cup of pasta cooking liquid. Meanwhile, in large nonstick skillet, heat 1 tablespoon butter. Add onion, peas and ham; cook 2 minutes. Stir in Alfredo sauce; bring to simmer. Drain fettuccine and place in large bowl; stir in sauce and, if needed to thin, add reserved pasta water. (For a quicker cleanup, add pasta to sauce in skillet). Toss to mix and coat. Season with salt and pepper. Delicious served with a salad or with toasted garlic bread.
