Rice crispy treats (homemade) it's so easy to do, but spread melted hershy chocolate on the bottom. Kids go nuts for that stuff. It is the biggest hit, and the easiest thing to make, for any one, even someone who can hardly cook.
Rolls.
Take a slice of sandwich bread and spread it with butter or margarine.
With a corner of a square or rectangle of bread pointing toward you, place across bread corner to corner the filling and roll up.
Fillings to consider:
Shredded chicken with some S & P or mayo
Asparagus spears
Surimi, a few slim slices of lettuce and a seafood dressing.
Present with the open ends upper most so people will see the filling they want
Two cupcakes each for the kids and a dictionary for you.
veggies and ranch dip, crackers, fruit, cookies, trail mix, pudding, cupcakes, anything that can be eaten with their hands and isn't too messy is the best thing.

Why don't you pack a cooler with ice cream and be the most popular parent there. A couple of weeks ago my daughter had to bring food. I was surprised to see 2 or three parents wheeling in a cooler of ice cream treats. Just a thought. Cookies is the obvious answer, but probably several others will do those. Candy would be enjoyed by the kids, or what about sliced watermelon, kids love that. I was at a barbecue recently, and when I sat a tray of sliced watermelon on the table the kids came in like vulcers and polished it off fast.
my kids always ask me to send rice krispy squares. i usually do cocoa krispies instead of regular though!! that's their fave. for some reason , i have noticed that the cheaper brands of cereal turn out much better (like the walmart brand). they also like "pigs in a blanket" little smokies wrapped inside croissants, although that one is a little more expensive depending on the class size.

Fruit and Marshmallow kebabs. Thread Pinapple pieces, melon of your choice, strawberries and marchmallows onto a kebab stick and you're done. Look great and kids love them.
dippy fruit kabobs..easy to store ..use strawberries apples bannanas kiwi peaches pineapple ..dip them first in lemmon juice to keep them fresh..thread fruit onto 6 inch skewers.. let the kids dip them in chocolate sauce or orange preline sauce .same stuff for sundays..you can even add crushed nuts
dirt pudding is always yummy!
1 (14 ounce) bag Oreo cookies
2 (3 1/2 ounce) packages French vanilla instant pudding
3 cups milk
1 cup powdered sugar
1 (8 ounce) package cream cheese
1/4 cup butter or margarine (1/4 cup)
1 (12 ounce) container Cool Whip
Break up cookies, put 1/2 on bottom of preferred dish and save other 1/2 for topping.
Mix pudding and milk together, set aside.
Mix sugar, cream cheese and butter.
Add sugar mixture to pudding; fold in cool whip.
Pour onto cookies, top with remaining cokies.
I like to let it cool for atleast a half hour if I have time.
Let's it all meld together and it tastes better cool

Blueberry Fruit Leather
4 cups fresh blueberries
1 cup fresh strawberries
1/4 cup honey
1 tablespoon almond extract
Place blueberries and strawberries in blender or food processor and process until smooth. Pour mixture through a strainer to remove skin and seeds. Stir in honey and almond extract.
Place mixture in a large nonstick skillet. Cook over very low heat, stirring frequently, for 1 hour until thickened.
Preheat oven to 150*F (65*C).
Prepare a baking sheet by lining with parchment paper or aluminum foil.
Pour thickened mixture onto prepared baking sheet and spread to form and 8 x 12-inch rectangle.
Bake with oven door slightly ajar* for 5 1/2 to 6 hours until the fruit sheet is dry enough not to stick to your fingers but moist enough to roll. Remove from oven and cool.
Store fruit leather in an airtight container or rolled in plastic wrap.
Makes 6 (3 x 4-inch) squares.
*Placing an ovenproof potholder in the oven door to keep it ajar will help dry the fruit leather by allowing moisture to escape.

Finger Jello
3 boxes of your favorite Jello
4 packages Knox Clear Gelatin
1/2 cup granulated sugar
4 cups boiling water
1 cup cold water
Place the ingredients in order listed into 9 x 13 x 2-inch pan, mix until well dissolved and place in refrigerator until set.
Note: They are great, won't melt and kids love them! Like a Jello Jiggler, but firmer.

Choco-Scotch Banana Bites
4 medium-size bananas
Plastic straws, cut into 2-inch pieces, OR lollipop sticks
1 cup HERSHEY'S Butterscotch Chips, divided use
1 cup HERSHEY'S Semi-Sweet Chocolate Chips OR HERSHEY'S MINI CHIPS Semi-Sweet Chocolate Chips, divided use
4 teaspoons vegetable shortening (do not use butter, margarine, spread or oil), divided use
Cover tray with wax paper.
Peel bananas; cut diagonally into 1-inch pieces.
Place straw piece halfway into each banana piece. Place on prepared tray; cover and freeze until firm.
Coarsely chop 1/2 cup butterscotch chips; set aside in small bowl. Coarsely chop 1/2 cup chocolate chips; set aside in separate small bowl.
In small microwave-safe bowl, place remaining 1/2 cup butterscotch chips and 2 teaspoons shortening. Microwave at HIGH (100%) 1 minute; stir. Continue heating 15 seconds at a time or until mixture is melted and smooth when stirred.
Covering each banana piece completely, dip half of banana pieces into butterscotch mixture; roll in chopped chocolate chips. Place back on prepared tray. Cover; return to freezer until set.
Repeat melting procedure with remaining 1/2 cup chocolate chips and remaining 2 teaspoons shortening.
Coat remaining banana pieces; roll in chopped butterscotch chips. Cover; return to freezer.
Makes about 1 1/2 dozen snacks.

Strawberry Citrus Snack Blocks
4 (1/4-ounce) envelopes unflavored gelatin
1/2 cup cold water
2 cups orange juice, heated to boiling
1 1/2 cups HERSHEY'S Strawberry Syrup
Sprinkle gelatin over water in large heat-proof bowl; let stand 5 minutes to soften.
Add juice, stirring until gelatin is completely dissolved. Stir in syrup.
Pour mixture into 13 x 9 x 2-inch pan. Refrigerate 4 hours or until firm.
Cut into blocks with knife or into shapes with cookie cutters. Serve cold.
Makes about 3 dozen blocks.

Banana Mini Morsel Bars
Ingredients:
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup (1 1/2 sticks) butter or margarine, softened
2/3 cup sugar
2/3 cup packed brown sugar
1 teaspoon vanilla extract
3 medium mashed ripe bananas
1 large egg
2 cups (12-oz. pkg.) NESTLé? TOLL HOUSE? Semi-Sweet Chocolate Mini Morsels
2 tablespoons powdered sugar
PREHEAT oven to 350°F. Grease a 15x10-inch jelly-roll pan.
COMBINE flour, baking powder and salt in a medium bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in a large mixing bowl until creamy. Beat in bananas and egg. Gradually beat in flour mixture; stir in morsels. Spread into prepared jelly-roll pan.
BAKE for 20 to 30 minutes or until wooden pick inserted in center comes out clean. Cool completely in pan on wire rack. Sprinkle with powdered sugar.

Fruit Sundae Snacks
Ingredients
3/4 cup cut-up strawberries
3 cups cut-up fruits, such as apples, bananas, cherries, seedless red grapes, kiwifruit, and/or peaches
6 large waffle cones
1/4 cup finely shredded jicama
Directions
1. Place strawberries in a blender container; cover and puree until smooth. Combine apples, bananas, cherries, seedless red grapes, kiwifruit, and/or peaches in a mixing bowl, and gently toss together. Spoon into cones. Drizzle with the strawberry puree. Top with jicama. Makes 6 filled cones.

Rice Cakes with Cheese-Apricot Spread
Ingredients
1/3 cup tub-style cream cheese
2 tablespoons apricot preserves
4 rice cakes or graham crackers
Directions
Stir together cream cheese and preserves. Spread each rice cake with about 2 tablespoons of the cream cheese mixture. Store leftover spread, covered, in the refrigerator for up to 3 days. Makes 4 snack-size servings.

Mango Yogurt Pops
Ingredients
1 teaspoon unflavored gelatin
1/3 cup peach nectar or apricot nectar
2 6- or 8-ounce cartons vanilla or peach fat-free yogurt with sweetener
1/3 of a 26-ounce jar refrigerated mango slices, drained, or one 8-ounce can peach slices, drained
Directions
1. In a small saucepan combine the unflavored gelatin and peach or apricot nectar. Let stand for 5 minutes. Cook and stir over medium heat until gelatin is dissolved.
2. In a blender container combine gelatin mixture, yogurt, and drained mango or peach slices. Cover and blend until smooth. Spoon mixture into eight 3-ounce paper cups. Cover each cup with foil. Cut a small slit in the center of each foil cover and insert a rounded wooden stick into each. Freeze pops for 4 to 6 hours or until firm.
3. To serve, remove the foil and tear paper cups away from pops. Makes 8 pops.

Ice cream cone cup cakes:
Buy rainbow ice cream cones, a box cake mix, and frosting if you don't want to make it yourself. Follow cake instructions, fill each ice cream cone 2/3 full with mix and place in between slots in oven rack, bake as if you were making cup cakes. frost and the kids will love them. Make holes in a soda flat turned upside down to transport and serve.
You should bring juice or water, sandwiches,chips, and your daughter's favorite food. If that doesn't work ask her yourself.
Make Tortilla Sandwich Wraps.

Condiments
Spread tortilla with condiment of choice. Layer on lettuce, cheese and lunch meat. Roll up and then cut in diagonal pieces.
The key is to not over fill so they will be easy to eat.
P.S. The ice cream cone cupcake recipe above is an awesome choice as well. My mom used to make those for my birthday parties at school and went over so well and are so non-messy.
