Filled Cupcakes?!

Filled Cupcakes?

I have a luncheon at the end of July where I will be feeding 150 people. I want to prepare jumbo filled cupcakes with cream cheese frosting. I am good with everything except the filling. The recipe I have is for Key Lime filling. It is fabuolus but I hate the thought of having to juice enough Key Lime for that many cupcakes. Any ideas for other fillings? I would like two different fillings if possible. Thought I might do the cream cheese frosting on one and maybe a chocolate ganache on the others.

CHOCOLATE NUT FILLING

* 2 cup Powdered sugar
* 1 oz Chocolate
* Few grains salt
* 2 tb Melted butter
* 1 tb Cream
* 2/3 cup Chopped nuts
* 1 teas Vanilla

Melt chocolate over hot water. Sift sugar. Add butter and cream. Beat until smooth. Add chocolate, salt, flavoring, and nuts.

GOLDEN CREAM FILLING

* 1/2 cup Sugar
* 3 tb Cake flour
* 1/4 teas Salt
* 1 1/2 cup Milk
* 2 Egg yolks; slightly beaten
* 1 teas Vanilla

Combine sugar, flour and salt in top of double boiler. Add milk gradually, mixing thoroughly. Place over boiling water and cook 10 minutes, stirring constantly. Pour small amount of mixture over egg yolks, stirring vigorously; return to double boiler and cook 2 minutes longer, stirring constantly. Add vanilla. Cool.

CUSTARD CREAM FILLING

* 1/2 cup Sugar
* 1/3 cup Flour
* 3/16 teas Salt
* 2 cup Light cream
* 4 Egg yolks, beaten
* 1 tb Butter
* 1 tb Vanilla extract OR 2 tb Dark rum

Mix sugar, flour and salt. Scald cream and stir into first mixture. Pour whole mixture slowly over beaten egg yolks, beating as you pour. Cook in top of double boiler over simmering water until custard is thick and smooth. Add butter and stir to blend. Cool and add flavoring of choice. About 3 cups.

how about custard, like they put in dough nuts.

you could make twinkie filling:

7 oz marshmallow fluff
2/3 c shortening
2/3 c confectioners sugar
1/2 t salt dissolved into 2 t hot water
1 T vanilla

Whip it all until fluffy and combined.

Obviously you'd have to multiply the recipe to achieve enough filling.

Strawberry, Raspberry, Apricot, Lemon, Pineapple, Bavarian Cream, If you're going to do chocolate with ganache maybe fill it with something lighter on the inside, maybe raspberry that is a lovely combination. I do cakes for a living and it is a wonderful combination~!!!!! Strawberry does very well too. Also blueberry would be nice.

The large jumbo cream cheese frosting ones sound good, how about filling those with nothing. Those are so rich on there own they can hold up pretty well. If you do want something special I made a pina colada cake which you could make into a cupcake, frosting, coconut flakes, crushed pineapple, coconut rum. EASY! This one is killler!!!

an easy alternitive would be buy bottles of lime juice

how about ragout?do you know how to make it?u must try it .its better than cheese,chocolate or custard. it's a blend of milk, chicken or ham, cheese,diced carrot, onion and spices.if u dont know how to make it, i'll tell you.
