Hey everyone! I am looking to cook a Hispanic/American DIsh.. I will only be able to cook with a stove top. I am looking to cook something with Chicken.. And maybe a little bit on the spicy side.. Not tooo much... Can anyone help me.. Oh and please do not refer me to some website where they have 100 recipes.. I am looking for someone has used before and would think it would be something good for me to cook. Also try to make it easy on me. Thanks for any help.

i haven't tried cooking it myself, but my cousin is from cuba and cooks this dish called "dirty socks". she puts raw chicken meat, sliced onion, and bell pepper in skillet. let that cook down, add about a 1/2 cup of water for sauce. add salt and pepper to taste. when everything is almost cooked, add a can of diced or whole tomatoes and finish cooking. cook a pot of rice. serve & eat. if you want spice, add a little cayenne pepper. my cousin also does another dish "pico dio" done the same but cooked w/ ground meat. add green olives & raisins to it. for this one, do not add water & do not drain the meat. i did cook pico dio and it is delicious!

How about fajitas?
Slice the chicken thinly, against the grain, and begin to brown in a fry pan.
When the chicken in half done add one yellow onion, quartered and sliced.
A few minutes later add one green bell pepper, quartered and sliced to the mix. Remove while the pepper is still crisp.
No oil, no added junk. A little minced garlic added to the meat helps.
Serve on warm corn tortillas, with chopped white onions, cheese, guacamole, sour cream, salsa, and tomatoes (Roma) as you like.
Easy, easy, and good too!
